At 2:35 it looks like you have wrapped the fish in paper then plastic has it also been refrigerated for some time? Can you please tell me what you have done here and why? Thankyou.

That white paper can control moisture. Usually raw fish get increase UMAMI taste when you take several days. He have takes 4days in footage. But when you use only plastic ,raw fish get worth in a day.
