What I love about japanese street food is even if some look weird you will find yourself wanting to eat it since the area they cook on looks clean and they carefully prepare each piece of their food making it look more appetizing for the customers unlike other hasty prepared street foods with dirty cooking area

Well, some of these are Taiwanese. Taiwan used to be part of Japan so they have a lot of Japanese foods/Street Foods. That being said, lots of Taiwan are also clean and organized, although there are areas that are less so in the rural areas.

I wish they would put captions when preparing each food item, I'd love to know what each is and made of...3 months ago while at work (Ontario Canada) at a national park, I came across a can...yes a can of instant breakfast cereal, with oriental writing on it, we get a ton of tourists from Japan/China, seeing instant breakfast cereal in can was pretty neat, I would have loved to have tried it..lol...the viewers who have nothing better to do than complain, are the ones who clearly take food for granted, if our world ever comes to a complete black out, I hope it's those people who have no clue how to live off grid, maybe then they will never complain about how food is prepared, I'd eat this food in a heart beat

Any metal cookie cutter will work and the trick is room temperature eggs and make a meringue with the egg whites, mix the yolks in the batter and prepare as normal but only make 3 servings worth of batter (very little). Get your pan on the oven set at 2/lo. Put a little sugar in the egg whites and use a beater to whip them until they're stiff. It can take 20 minutes...or feels like it. Stand mixers get it done faster. Once they're stiff pour in the batter you made and use a spatula to completely combine it all. Use the spatula to put your souffle batter in a plastic bag and seal it. Cut a tiny corner. Much easier to pipe. Put your metal cookie cutter of choice in the pan and put butter inside the form. Pipe in batter. Cover and let cook on medium low heat. Use a butter knife to get the cookie cutter off. Or just pipe the batter in shapes the less batter you add to the meringue the more stiff it'll pipe. I've made them twice this week because they're ridiculously delicious. Just time consuming. The trick is getting the meringue about as stiff as frosting.

Where are you visiting? If your in Osaka (I think there is one in Tokyo too) you should go to 'A Happy Pancake' dont forget to get a number ticket when you get there though since its normally really busy, but the souffle pancakes are amazing!

First food, Dondonyaki is not common street vendor food in Japan, the area you can find this is limited mainly to North East region (Tohoku). Actually I have never seen this in my life, living mainly in central region (Chubu). The second food seems to me rather Dango than Mochi as Mochi is very firm and cannot be edible in such short cooking time. The forth shellfish is Hotate. We eat also Hamaguri almost in the same manner, but it is different.
