In this video, we introduce a delicious and easy mixed rice dish (takikomi-gohan) for those who want to lose the oil. It's even healthier and tastier than fried rice!!
Although it can be made in a regular pot, this time we will use a traditional Japanese earthenware pot.

・5.3 oz (150g) Raw rice (Japanese short-grain rice)
・3.5 oz (100g) Chicken
・1.4 oz (40g) Gobo (Burdock)
・1 Egg
・1/2 tsp Oil
・4/5 cup (200ml) Water
・1 tsp Soy sauce
・1 tsp Miso paste
・1 tsp Oyster sauce
・1 tsp Mirin
・A pinch of Salt
Topping
・Minced green onion

2. Ponzu Salmon Takikomi Gohan
Ingredients [for 2 servings]
・5.3 oz (150g) Raw rice (Japanese short-grain rice)
・2.8 oz (80g) Salmon
・1.7 oz (50g) Maitake mushroom
・4/5 cup (200ml) Water
・1 tbsp Ponzu sauce
・1/2 tsp Grated garlic
・A pinch of Salt
・1 tsp Butter
Topping
・Shredded shiso leaves

・5.3 oz (150g) Raw rice (Japanese short-grain rice)
・3.5 oz (100g) Thick fried tofu (Atsu-age)
・1.7 oz (50g) Canned corn
・4/5 cup (200ml) Water
・1 tbsp Soy sauce
・1 tsp Dashi powder
Topping
・Shredded shiso leaves
・Minced myoga ginger
・White sesame seeds

Ingredients [for 2 servings]
・5.3 oz (150g) Raw rice (Japanese short-grain rice)
・4.2 oz (120g) Sweet potato
・2.8 oz (80g) Chicken
・1 tsp Soy sauce
・1 tsp Sake
・1/3 tsp Grated ginger
・4/5 cup (200ml) Water
・1 tsp Dashi powder
・1 tsp Honey
・A pinch of Salt
・1 tsp Butter
Topping
・Black sesame seeds

Ingredients [for 2 servings]
・5.3 oz (150g) Raw rice (Japanese short-grain rice)
・2 oz (60g) Edamame beans
・1 sheet of Thin fried tofu (Abura-age)
・2 tsp (4g) Salted kombu (Shio-kombu)
・4/5 cup (200ml) Water
・1 tbsp Soy sauce
・1/2 tsp Sugar

・1/2 oz (15g) Carrot
・1 Shiitake mushroom
・1-2 tsp Shredded ginger
・3/4 cup (180ml) Water
・1 tbsp Soy sauce
・1 tsp Mirin
・1 tsp Sake

You can make these with your rice cooker actually. Once you have added the amount of water needed to cook the rice in the rice cooker, remove the amount of water for the seasonings from it and add the seasonings to it and mix. Doing the eggs separately is so much better! If done in the pot the texture changes, as far as I can tell. You always have great suggestions, and give sensible reasons for your choices. It is one of the things I really love about your channel!

Just made a dish like this but with dashi, soysauce, sugar and sweet soy sauce. I used chicken and onion. Basically turned into chicken gyuudon but the rice becomes extremely savory as well.

This reminds me of Korean bibimbap (Korean mixed rice) and Chinese clay pot rice (part of Cantonese cuisine) and Chinese menfan (similar to Cantonese clay pot rice).

Menfan and Cantonese clay pot rice are different. Cantonese clay pot rice the ingredients are put on top of the rice. Ingredients are added to the pot late in the rice cooking stage. Menfan is to put everything together at the start and cooks everything the same time. Menfan is more difficult in this case because vegetables give out water during cooking. Thus it will be more difficult to keep the water content right. Otherwise the rice will be too soggy.

These look excellent and I'll definitely be trying them. I've even found a place here in Aotearoa New Zealand where l can find Burdock (which l've never tried) and Shiso seeds, although Shiso/Perilla leaves are sometimes available in Asian shops here. The "burnt" rice made me chuckle. I've lived with Korean, Thai and Chinese boarders. ALL of them loved the "burnt" rice and taught me to love it too. According to one Persian website l visited for recipes - being able to make rice with the right amount of tahdig (bottom of the pot), is the sign of a good cook. It seems as though a love for "burnt" rice is universal among cultures where rice is commonly eaten. I can't help wondering if perhaps a frugal housewife trying to save dinner, convinced everyone how good it was. 😊

Very nice as always, Sayaka. Beautiful and ambitious with six variants. Gobo is very good, in the spring one can also eat the flower stalks before there are flowers, they taste artichoke. Sweet potato and also shio kombu are favourites in my kitchen, edamame is king. The pot you use is very nice! Well done, arigato!

Agree nothing is quite like Shiso but Shiso! Rather than substituting often we can find dried purple Shiso as a ingredient at Japanese specialty stores in the UK. Imagine something similar may be available in many other places outside of Japan.

Very convenient ways of enjoing nutritious cooked rice. In Korea's style all I need is prepare gimchi. In addition there is a similarlity. Burnt rice? at the bottom brown part of pot- Koreans say it Nu.rung.ji▪︎separately on perpose enjoy eating it as another manu and exist the term Nu.rung.ji. But I like plain rice, bibimbap and that kind of earthen ware pot rices.💗

The burnt part is why I don’t use a rice cooker to cook rice. I prefer toasty flavored rice over plastic tasting rice any day of the week

Thanks for watching my video! Yes, it can be made in a rice cooker. Remove water equal to the weight of the seasoning from the amount of water you normally add before adding the seasoning. Also, please use renkon instead of gobo! It must be so tasty 😆

You can use your rice cooker! Once you have added the amount of water you usually cook with, you should remove from it the same amount of water as the seasonings. For example, if you add a tablespoon of soy sauce, you can remove a tablespoon of water before cooking rice in the rice cooker to prevent the rice from becoming soggy.

I have never cooked long grain rice, so I am not certain, but the amount of water may be the same as in the video. However, it may taste better if you soak the rice in water for about 30 minutes before cooking. Sorry if I am wrong.

Thanks for watching my video! I'm not sure if it works, but please try this method. 1. Place over medium heat, uncovered first. Occasionally use a spatula to peel off the rice from the bottom of the pot. 2. Bring to a boil, then peel the rice from the bottom of the pot again, then cover with a lid. Reduce heat to low and cook for 10-15 minutes until the water is completely gone.

I think it will come to a boil after about 6 minutes of heat, so once you see that it has come to a boil, simmer it for about 15 minutes from there until the water is completely gone. This number may vary slightly depending on the type of pot and the ingredients used, so you will need to confirm this with your eyes.
