IMO, few things bring me more pleasure than using a quality knife that has been properly sharpened to a surgeon's precision. My Grandfather was a butcher and he taught me the value of good steel, sharp edges and the proper care of all tools. Proudly, I have several of his tools of his trade and they are always maintained in a state of scary sharp readiness...and respect

I recently visited Japan and wanted to buy a handcrafted knife directly from the craftsman who made it. Unfortunately, I wasn't organised enough to visit a smithy for this to happen. The next best thing is purchasing one of these knives - which I have just done. Seeing 3 generations working in the shop together, including a 10th generation craftsman, is incredibly special. I look forward to many, many years using the knife (and handing it down to one of my children).
