Fai owns Raan Jay Fai, Thailand’s first “Street Food” restaurant to win a Michelin star, and one of only three street food restaurants in the world to garner that honor. Guests flock to Fai's place for congee and crab omelets.
With her signature oversized goggles that protect her from grease, she opened the stage of the sixth MAD Symposium, demonstrating live how to make her famous omelet.

I am Thai and so proud of her. She made our street food is destination of many travelers around the world, and they enjoy and happy with it. The delicious of Thai foods that shows a variety of taste and shows what we are, foods make people smile and we are so happy too.

She also said the crab would taste better if it was fresh. That's why she bring her own crab. The translator didn't translate that.

I was lucky enough to eat at her restaurant in Bangkok last night and I can confirm that the crab omelette is beyond delicious. As was every dish. The restaurant is pure theatre but the crowds are there because of the food!

I ate the crab omelet at Jay Fai's restaurant last Spring. It was wonderful and an amazingly simple but unique dish with so few ingredients but perfectly executed. She does all the cooking there and it shows.

I love this video. Jai Fai is an amazing chef she is so cute and doesn't realized she is funny also. I can hardly wait to visit Bangkok and go to her restaurant.

บอกเลยป้าไฝคือเชพของจริง และไม่ใช่แค่ทำอาหารเป็นแต่ทำออกจากใจซึ่งสามารถรับรู้ความรู้สึกได้ มันแตกต้่างจากเชฟที่เรียนมาเลย แต่มันออกจากจิตวิญญาณของแกจริง ๆ

ฉันกินร้านเค้าตั้งแต่ราดหน้าทะเลรวมมิตร60 ทุกอย่างในจานคือทะเลตัวใหญ่มาก นั้นคืออายุ12 ตอนนี้41 แล้วความอร่อยกับราคามันเหมาะสมมากเพราะเจ๊เค้าเดินตลาดจ่ายของสดๆและมีร้านประจำที่เอากุ้งสดๆมาปรุงอาหาร ยอมจริงๆ🙏🏿❤️

น้องล่ามเก่งจัง ยากนะคะที่จะจับใจความแล้วแปลออกมาได้ ถึงจะไม่ร้อยเปอร์เซ็นต์ก็เถอะ เจ๊เล่าให้ฟังยาวหลายประโยคเลย เป็นพี่จำได้แค่ประโยคแรกกับสุดท้ายที่เหลือตรงกลาง 6-7 ประโยคจำไม่ได้แระ 55 ชอบเจ๊ไฝจังพูดเพราะ อารมณ์ดี น่ารักค่ะ

first when I came here this was just an ordinary food stall with an old lady chef who was unique and not crowded seemed expensive. but who would have thought the award from Machellin changed the fate of this restaurant too. :). I hope to be healthy always for auntie and more success. also be patient serving photos with the visitors! :)

Many things left not translated are her complain about things are different from her restaurant. Like heavy new wok that it's also from her restaurant but not her usual one that were older than this, The spectacular were larger (I assume someone choose the new and good looking one for the show). And then, there are also large size of crab meat that hard to shape it and require more time to cook, Make this one premium grade and would cost $100 instead of small size $40. At her restaurant she would lit two stove at different heat, one high and one low. So she could use specific heat level at the step she need. Like low heat to shape it up and higher heat to make it crispy outside. But despite those problem, She always know what to do to make it perfect. All of these are how solid experience she had.

Akami McCallum it’s called a clay stove/brazier. Used throughout Asia. It’s portable.

It is an ancient stove ,made of clay and set on a fire with wooden chacoal,one day if we have no cooking gas or electricity is the best choice,it is also used in the remote rural of Thailand,especially among the group of the old ladies.

Great chef, but horrible translator. She was incredibly humble but the translator kept delivering the wrong message and missed some key points she made. I'm half Thai and my dad promised me to bring me to her restaurant but sadly he passed away before he could fulfill his promise. I'm planning to go there this summer with my mom to tell her he kept his promise.

In Asia, the service is more direct and less polite. People from other countries aren't used to the attitude but it's fairly common.

allisgoodallisbad Please see her materials, almost comments maybe from Thai, that we are familiar with cheaper foods around Thailand, but compare with value of it and her materials why always Thai street foods in Thai should cheap?Some Thai people can buy luxury items from around the world but not give value for Thai products that easy to found in Thailand. I think she is artist of foods, I never see that crab omelette in that shape before. Just she famous then many people try to cooking the crab omelette as she do.I think the crab omelette is her signature and it's worth.

So Power เข้าใจครับ แต่เตาถ่านไฟเวลามันร้อนมันคลุมกระทะ กว่าครับ. ถ้าเตาแก๊สไฟแรงขนาดคลุมกระทะ มันจะแรงไปไหม้แน่นอนครับ นี่ไฟถ่านแรงแบบธรรมชาติ สูงจนขอบกระทะไหม้ ผมว่าเถ้าถ่าน ที่ลอยขึ้นมา มันต้องมีโอกาสครอบคลุมพิ้นที่ บ้างแหละครับ อารมณ์แบบ รมควันอะครับ แต่ไม่ได้ตั้งใจแค่นั้นเอง เวลาคุณยืนทำอาหาร ด้วยเตาแก๊ส คุณได้กลิ่นแก๊สไหมครับ แล้วถ้าไปยืนดูคนทำอาหารด้วยเตาถ่าน จะได้กลิ่นถ่านไหมครับ ผมเข้าใจที่คุณพูดนะตามหลักความเป็นจริง มันใช่ แก๊สมันคุมไฟได้ดีกว่า แต่อย่าลืม ว่าองค์ประกอบ อื่นๆ มันมีความแตกต่างแน่นอนครับ ระหว่าง เตาแก๊สกับเตาถ่าน

​คนรุ่นเก่าที่ใช้เตาถ่าน สามารถคุมไฟได้ด้วย หู-ตา-จมูก-ปาก และใช้ รูป-รส-กลิ่น-เสียง ในการสังเกตอาหารของตัวเอง หลับตาทำก็ยังอร่อย ต่างจากคนรุ่นใหม่ ที่ต้องวัดทุกอย่างเป็นตัวเลข ถึงจะทำออกมาให้พอดีได้ ผมมองว่า...อาหารนั้นวัดกันที่ความอร่อย ไม่ได้วัดกันที่ตรรกะความถูกต้อง เตาถ่านมันเปรียบเสมือน ตัววัดความอดทนอดกลั้นในการทำอาหาร กว่าจะทอดไข่เจียวปูได้แบบวันนี้ต้องลองผิดลองถูกมาไม่รุ้กี่ครั้ง กว่าจะเข้าใจอารมณ์ของไฟ กว่าจะพัฒนาสูตรให้สมบูรณ์ อาจจะพูดเว่อร์ไปนิด แต่มั่นใจว่าไม่ได้ง่ายเหมือนเปิดแก้สแน่นอน

@So Power หลักวิทยาศาสตร์นี่แหละครับ ถ่านแต่ละชนิดก็ให้กลิ่นไม่เหมือนกัน กลิ่นมันสามารถตกลงไปในอาหารได้ มันอาจได้กลิ่นชัดหรือเข้มมาก แต่กลิ่นมันก็มีผล

@So Power แล้วการแผ่ความร้อนของเตาถ่านก็ไม่มีเหมือนกับเตาแก๊สนะ ที่พูดนี่ก็ไม่ได้งมงายเชื่อตามเขามา อ่านมาศึกษามา ใช่ ข้อดีข้อเสียมันก็ต่างกันในการใช้งาน แต่ถ้าปัจจัยในการทำอาหารที่เปลี่ยนไปอาหารที่ออกมามันก็ไม่เหมือนกันแน่นอน ถ้าเจ๊ไฝไปใช้เตาแก๊สแทน ไข่เจียวเจ๊ก็จะออกมาคนละแบบกะใช้เตาถ่าน แต่ถ้าไม่อยากฟังความคิดเห็นก็ช่างเถอะ ถ้าจะตัดสินคนอื่นไปในทางที่ตัวเองเข้าใจ พูดไปก็ไร้ประโยชน์

@@lyhourchhin3756 she was injured, so the restaurant closed for a couple of weeks. She has now recovered and the restaurant is open again.
