配料: Ingredients:
1 kg 糯米 / 1 kg Glutinous rice
½ kg 五花肉 / ½ kg Porkbelly
10朵花菇 / 10 Mushrooms
50 g 虾米 / 50 g Dried shrimp
100 g 小葱头 / 100 g Shallot
10-12 咸蛋黄 / 10-12 Salted Egg Yolk
½ kg 花生 / ½ kg peanuts ( pressure cooker cooked 40 mins)
适量粽子叶与粽绳
Appropriate amount of bamboo leaves and dumpling string
------------------------------------------------------------------
花肉调味料:Porkbelly condiment
½ 茶匙盐 / ½ tsp salt
少许糖 / dash of sugar
少许生抽 / some soy sauce
少许胡椒粉 / dash of white pepper
少许五香粉 / dash of five spice powder
1湯匙黑酱油 - 1 tbsp black soy sauce
*调味料需根据个人口味进行调整
*Seasoning needs to be adjusted according to personal taste

糯米调味料: Glutinous rice condiment
2-4 湯匙黑酱油 / 2-4 tbsp black soy sauce
少许盐 / dash of salt
少许糖 / dash of sugar
五香粉 / five spice powder
少许胡椒粉 / dash of white pepper
少许酱油 / dash of soy sauce
*炒好糯米灭火后加入3-4 汤匙爆香葱头片伴均匀即可
*After the glutinous rice is fried, turn off the fire, add 3-4 tbsp sautéed shallot slices and mix evenly

烹饪小技巧:
1.包粽子的时候手一定要放松,而且线不能缠得太紧了,否则在煮的过程中因为糯米的膨胀,而使得粽叶撑破,这样便容易会漏米,所以线需要松弛有度.
2. 如果放入高压锅中,添上比粽子多的清水,差不多45分钟便可。
3.水煮花生可放入冷鹽水中浸泡,讓花生充分吸收水分后才煮。
Cooking Tips:
1. When wrapping zongzi, the hands must be relaxed, and the thread should not be wrapped too tightly, otherwise the leaves of the zongzi will be broken due to the expansion of the glutinous rice during the cooking time, which will easily leak rice, so the thread needs to be loosened no so tight.
2. If you put it in a pressure cooker, add more water than the rice dumplings, and it will take about 45 minutes.
3. Boiled peanuts can be soaked in cold salt water to allow the peanuts to fully absorb the water before cooking.
