圧力鍋を使うあんこの作り方です。砂糖少なめの粒あんやこしあんを作りましょう。小豆を圧力鍋で炊けば、簡単に手早くあんこが作れます。すっきり味ならグラニュー糖や上白糖で、健康志向なら黒砂糖やきび砂糖で炊きましょう。

【材料】
小豆‥‥250g
グラニュー糖‥‥250g
水‥‥900cc
塩‥‥小さじ1/5
【Ingredients】
250g azuki beans
250g granulated white sugar
900cc water
1/5 tsp salt
【作り方】
1、小豆を流水で洗う。
2、鍋に小豆を入れ、小豆の上2~3cm位まで水を入れて沸騰させる。
3、沸騰したら差し水(コップ1杯)をする。差し水をすると、豆の内外の温度が均一になり、芯まで柔らかく煮えます。
4、再び沸騰したら、中火にしてもう3分煮る。
5、ザルにあけ、流水で軽く洗う。小豆のアクを抜く工程を渋切りといいます。渋みが取れて、すっきりした味になります。
6、小豆を圧力鍋に入れる。
7、豆の3~4倍の水を入れる。
8、目詰まり防止のため、落し蓋を置く。
9、本体にセットして加熱する。圧がかかったら弱火にし、15分くらい加熱する。
10、火を止め、圧が抜けるまで自然放置して蒸らす。
11、豆の固さをチェックして、豆を指で潰せるくらい柔らかくなっていればOK。
12、小豆をザルで受け、煮汁を捨てる。まだ硬い場合は、再度数分加圧する。
13、小豆だけを圧力鍋に戻す。
14、砂糖を数分間隔で2~3回に分けて入れ、中火にして、焦がさないように絶えず木ベラでかき混ぜる。
15、木ベラで鍋底に一文字を描いて少し戻ってくるくらいの固さまで練って火を止める。余熱で水分が飛び、冷めると固くなります。少しゆるいくらいで火を止めましょう。練りの時間は約10分。
16、塩ひとつまみを加え、軽く混ぜる。甘味が引き立ちます。
17、すぐにバットに移す。鍋に入れたままにしておくと、水分が飛んでぼそぼそのあんこになります。
18、密閉容器に入れ、冷蔵庫で1週間、冷凍庫で1ヶ月保存できます。
●注意
あんこは飛び散ります。熱いので火傷をしないように手袋をして下さい。
【Recipe】
1、Rinse azuki beans under running water.
2、Put azuki beans in a pot and pour water till it is 1 inch (2.5cm) above the beans.
Bring it to a boil.
3、Add 1 cup cold water. This improves the taste and makes the beans softer.
4、When it boils for the second time, simmer for 3 minutes on medium heat.
5、Drain in a sieve and rinse. This will remove any bitterness.
6、Put the azuki beans in a pressure cooker.
7、Add 900cc of water.
8、Place a small lid to prevent the foam from clogging the vent.
9、Close lid properly. Cook on high heat. When the pressure indicator pops up, reduce to low heat, and cook for 15 minutes.
10、Turn off the heat. Let the cooker cool down naturally until the pressure is released.
11、Beans are done when they can be easily mashed between two fingers.
12、Drain in a sieve. If beans are still quite hard, return to high pressure for a few more minutes.
13、Put the azuki beans back in the pot.
14、Add sugar in 3 separate times and cook over medium heat. Mix continuously with a wooden spatula so the beans don't burn on the bottom.
15、If you can see the bottom of the pot when you scrape with a wooden spatula, it is ready to remove from heat. Paste will become harder as it cools.
16、Add salt and stir lightly.
17、Pour into a container to cool down. Do not leave it in the pot.
18、Cover with plastic wrap and keep in the fridge to store after cool down.
It will keep for 4-5 days and frozen for 1 month.

Be careful not to splash, as the mixture is really hot, so please wear gloves.
