When it comes to Chinese breakfast, Jianbing (煎饼果子) is an absolute classic. It is somewhere between a pancake and an omelette. In this video, you can learn how to make Jianbing and I share my favorite tricks to make your life easier!

🌯 Ingredients
For the Cuibing (脆饼):
Wonton wrappers, for deep frying
Oil
Batter (for 3 Jianbing pancakes):
150g all purpose flour
75g mung bean flour (NOT mung bean starch!)
a pinch of salt
350g water
10g neutral (canola) oil
Eggs. Use free range ❤️🥚🐔
For the sauce:
2 Tbsp Hoisin sauce
1 Tbsp Fermented bean paste (Doubanjiang, 豆瓣酱)
1 tsp Fermented Tofu (Doufuru, 豆腐乳)
1 tsp sugar
For garnish:
Chinese pickles (mustard stem)
cilantro, chopped
spring onions, chopped

Lived in Beijing for a year and this was BY FAR one of my favorite dishes. Crisp, savoury, fresh, and probably most importantly, CHEAP! (Less than $1)!! Thank you for sharing this recipe!

Thanks for the video, will be trying this out. When I was living in Beijing, I bought this twice a day from the same guy every single day. Once in the morning and once after work. The combination of the crispy and smooth textures as well as the spice and coriander was unlike anything I'd ever eaten before.

Great recipe. Here are some things I've added to get my own personal version: add more water to the batter to make it more liquid (similar to crepe batter). Use medium/high heat and use a flat pan. Once you put in the batter in the pan, spread the batter and put the rest back to your bowl in order to get a thin jianbing. Unfortunately, I haven't had the chance to taste an 'authentic' jianbing yet, but I can tell that this recipe is pretty delicious. Keep up the great work, Andong!

I saw one jianbing video and the batter was 100% mung beans and water. As the video stated in the beginning, so many variations. Great video!

Thank you so much! We lived in SH for 2 years and in BJ for 7. SH jianbing is sooooo much better than Tianjin. We took our first swing at it today and did it pretty much right. We didn't know about the mix of flour for the batter, so THANK YOU for that.

Crepe makers are perfect for jianbing. I recommend experimenting with cheese/sausage slices for some nice western fusion of flavours.

The recipe is great but I used a crepe pan, with low sides, which I find more practical, when it comes to flipping the pancake 😊

Or even a flat griddle if you have access to one, since that’s what the street food vendors appear to be using.

Would you consider doing a recipe on Shandong Jiānbing? The crepe batter seems to be more dough like, and the sauce seems different from all the Jianbing Guozi I had while living in Shanghai. I’d be interested to see what the differences were, but can only ever find detailed recipes on Jiānbing Guozi.

My favourite jianbing place in Shanghai actually doesn't flip and leaves the egg on the inside. At the beginning I thought that's normal then I found out that it was one of the fewer places that did so, but I living, cleaner hands in the end hahaha

I ate this everyday in China too, I used to buy it from a lovely young couple who were extremely clean and modern in their cooking. They had a secret that I'll share with you, you can use plain tortilla chips (including Doritos) as your cuibing! That's what they did and it was amazing. Way more convenient than deep frying..

I wonder if a pizza stone would work like that? i understand that pizza stones are rough but what if it was a layered over with clear starch sealant like rice several times to give it a smooth coating and then baked, just like grease is done over a cast iron plate, or well perhaps a plate cast iron plate for cooking tortillas might work too. as long as it's been seasoned? interesting though. thank you for the information on how to make one.

I got lucky finding mung bean flour at an Indian store. Maybe its a more common item in Indian cuisine, I couldn't find any at any of the 3 Asian markets in my town.

They are different. He said at 0:15 that "there are so many different varieties of Chinese pancakes"... and dan bing is actually another kind of pancake. 煎饼 (jian bing) or 煎饼果子 (jian bing guo zi) was originated in Tianjin and popular in Northern provinces, but now it's widespread in all large cities in China.

well I guess when I instagrammed my brother in law's "'jian bing" I was wrong. It was a different bing. Bing is basically bread in Chinese. And I just wikipediaed a few different bings and guessed at that one. Anyone know what that crunchy sesame seed bing is called?

Hammer :) ich war vor Jahren mit der schule in China und hab das dort sehr oft gegessen. Nachdem ich wieder Zuhause war hab ich es versucht nachzumachen aber es war nie so wie dort. Dein Rezept sieht Hammer aus :) ich habe morgens in China auch öfter ein Art pancake gegessen der sehr dünn war, der aber mit sehr viel Gemüse use. Gefüllt war. Weißt du wie der heißt?
