I just made this recipe. It came out fantastic but two whistles in the cooker overcooked the eggplant. Oh but the dish -- it came out yummy.

I would like to know how you select your eggplant. I always get black seeds inside when I cut the vegetable. Last time you made baingan aloo with small eggplants. Those too were very white inside. Please please do advise.
