He might have done all the research, and taught you and many others on the job, but he didn’t teach it in THIS vid. The only think he taught was to start the cooking in hot water instead of cold. What about the rest? I want to know how you can get them to the right doneness (overcooking makes a green yolk ring- so how long to boil?) And how do you peel, say, a dozen eggs, not just 1-2, without the shells getting difficult to peel without damaging the cosmetics of the egg if you are making something like halved eggs for a Cobb salad or for deviled eggs? He left out the important stuff.

So yeah….you are just watching some guy make an egg salad sandwich. And we all know how to do that, I I would hope.

I cooked at a retirement place in the south US. One woman there would stop you in the hall and tell you how you had gone astray putting onions in egg salad. Very opinionated and micu more simple with the older recipes lol

I agree with Jack and have said it before. I love to watch Kenji for his recipes, but I also watch for the relaxation. I appreciate his knowledge and the way he teaches not only the recipes but the utensils he uses and why. I also wanted to point out that I like the painted toenails today Kenji. I am sure I know who did that artwork and it makes me appreciate what a great dad you are!!!

I personally can’t stand a pickle on a hot burger. I love a cold pickle spear served on the side, but hate them warm on a burger. I feel like the odd man out because everyone loves them on burgers. I just don’t get it 😩

... will never eat an egg salad again! The grease in the mayo, the dead skin cells, the stuff under the fingernails... far from appetizing.

Once the eggs are peeled I rinse them in running water ... no remaining eggshell fragmants, no scraping the egg with fingers!

To put it simply yeah. But to be fair there are some people that swear by methods such as salting water, freezing your eggs, starting from cold water, sacrificing a virgin to baphomet. You know, totally normal boiled egg things.

It's a little bit more detailed than that, he explains it more thoroughly in his video dedicated to the technique. Yes it's just boiling them, but also he starts out with hot water and rather than doing a deep boil like most of us at home probably are used to doing he seems to do a boil/steam which he says hardens the whites before they fuse to the shell, something that happens frequently if you start with cold water. So it's a bit more nuanced than it might seem, even if only slightly.

Walks get heated much hotter than cast iron pans typically, they also get deglazed with virtually every cook, and they get very well scrubbed out with the bamboo brush after virtually every use. Polymers simply don’t build up in them. The nonstick properties of a walk have more to do with technique than in cast-iron.

I feel you. It's no longer funemployed, it's get me out of bed before my brain melts. Plus the depression from a year and a half of being rejected from jobs is making it that watching somebody happily make and eat an egg salad sandwich is uplifting.

I guess it is to avoid double dipping? He probably doesn’t want to lick his fingers, add the salt and olive oil, and then put his freshly licked fingers back in the salad.

For some reason a few people always end up complaining if he does stuff like that. Same goes for when he washes his hands between video shots, people yell in the comments asking why didn’t he do it on video.

It is sanitary enough

No matter what you do people will find something to complain about so I just do what I feel like doing.
