In this video I'm in Denmark at the house and workshop of Maksim Enevoldsen, the genius behind www.japanesenaturalstones.com, the first guy to bring Japanese Natural Stone and Japanese knife love to the world outside Japan.
Maksim was the trailblazer in a world where, let's face it, not everyone was craving Japanese knives or stones. Starting a business with obscure products, that takes guts.
Maksim's making his grand debut on camera today, and that's kind of a big deal for me. He never did interviews before. So I feel honoured and grateful that he agreed to do this video with me.
And trust me. We’re in for a treat as he unveils his private knife collection. Most of the stuff in his private collection you don’t see every day folks.
I can promise you that.

Yes, a video on JNats would be great!. If possible, then please use more cameras, especially for closeups. Here in this video, sadly, all details of the knives were not visible. On JNat stones there is a lot of stuff too which we love to see, the colors, kana, stamps, etc. 😊 Thanks! Groeten uit Nijmegen, Nederland

I hear you. I wish I had made more close up footage of the knives. But at least we have all the stories. And I was not there primarily for making this video in the first place, it was something we squeezed in. And, l I'm just one guy with a smartphone. Not a filmproduction crew with full gear. 😅 Please allow me to be the small content creator that I am and let me slowly progress/evolve into a bigger and more professional channel. Step by step. Excellent video! Congratulations on the new microphone. The audio is WAY better and it makes your presentation much better.

I actually do not have a new mic or new camera, I have used software to enhancecl the audio (reducing echoes and noise by AI). It did make the audio with the two of us a bit weird, but for my talking head style video (me talking into the camera by myself), it works amazing.

Still have to figure out the ins and outs/do's and don'ts with the audio software I have used. But the audio did improve a bit, without having to spent thousands a on fully equiped, dedicated and sound treated studio.

I love this video. Are there any shops in Tokyo, Kyoto or Osaka that you think might carry Kato, Jiro or Shigefusa?

Thank you so much! 🙏🏾 All the vendors that may sell Jiro knives are listed on the website of Hitohira. Shigefusa and Kato knives are mostly sold at Japanese Natural Stones in Denmark, but also via a few other selected vendors. These 3 forges make some of the most sought-after knives, and they are very hard to come by. Plus, they're expensive. These days. It will be almost impossible and super unlikely to bump into knives from these makers in a shop. They sell within minutes after they are released.

@@ckb2104 Shigefusa and Kato knives are on a different level. Jiro's are born to cut with. My Tetsujin Metal Flow is amazing, and Takeda's are nice too. It's all very subjective and hard to compare though.

Your fear is probably supper accurate. But yeah, pay JNS a visit, it is worth it.

What kind of knife would you recommend to cut hard things like squash or a watermelon?

I usually use a long and thin Gyuto or Nakiri for the harder stuff. My Shibata Kotetsu and Kei Kobayashi fly through the hard stuff. Watermelons are getting sliced with my 400mm Nakiri, 360mm Gyuto. But anything longer than 240mm will do.
