C# minor pentatonic is C# E F# G# B C#. IOW a minor pentatonic is a normal natural minor (flat 3, flat 6, flat 7) scale without the 2 or the 6. The little variation he's talking about is more of a change on a normal guitar run than a change to a scale. A double stop on guitar is when you add the 4th above the note in your pentatonic scale in harmony. When he gets to the minor 7th of C# minor (B), he plays a major 3rd above it (D#) instead of a 4th (E). The reason is because he wants the movement from E to to D# when he walks down because the song is in E major, so adding the D# makes the riff walk down the E major scale all the way to the 4 chord (A) that comes after. Listen for the descending major scale (the notes are E D# C# B A). Then, his "inversion" of A isn't really an inversion at all. A is still in the root of the chord so the inversion hasn't changed. What he's saying is that he fingers it differently than a normal barre chord by playing the E and moving from B to C# to make a brief suspension on the 2nd of A major (B). Then, just a normal E chord. I know it's dense, but I hope that helps.

If you’re around intermediate, then Eric Haugen is a great KZfaqr For getting into theory at beginner level I hear that Marty Schwartz seems to be popular at that stage And they both (along with many popular KZfaq guitar instructors) likely have playlists in their videos where they go over the very basics of theory and the language it uses if that’s needed
