This is so helpful, John! I've tried making my own oven-baken chips many times from a variety of recipes, and they never came out right - always either soggy, or overcooked, or even a combination of the two! I finally gave up trying on my own about 20 years ago - but tonight, I'm going to try your recipe. The cornstarch is just brilliant: I'd never have thought of it, but I can see how and I think I undertand why it works. Your air fryer series is a treasure, and I hope you're planning a book dedicated to such recipes. Thank you so much for all your videos, but especially this one, which I believe solves a frustrarting, longstanding cookery problem for me!

That’s not a chip butty, that’s a chip sandwich. Difference is a butty is a single piece of bread folded, a sandwich is 2 pieces of bread separated by the chips. Butt is the same root as something that is pushed against an end, so it’s an end folded,

Looks good! Here is another tip. If using good clean potatoes do not discard the peels. Give the peels a light coating of oil, sprinkle your favourite spice combo on, place on a tray and pop into the oven until crispy. Trust me, you will do it again!

I have tried and failed many times at making air fryer chips by trying so many methods. Once again you came through on what is the gold standard after trying your method and it came out amazing. The only thing I swapped out was the sunflower oil for chicken lard I extracted from the chicken skins. This will be added to my collection of air fried recipes.

I used a little garlic salt and mild cayenne plus oregano and also avocado oil, which has a definite flavour but worked really well with the chips. Best chip butty in years -- which is all the more enjoyable as an ex-pat here in Germany!

Thankyou for the chicken & Chorizo pie recipe, they are fabulous & are a firm favourite in our household. Anybody who hasn't subscribed, you can't get much better. Hmm, I know it was a joke but in this case I would go with naming them fries to give the credits the land who invented them. 😄 But yours look very well done 👍 For everyone who don’t have corn flour. It works also with normal flour, that’s it what the industry often is using for the oven fries.

Yep, potatoes should always be skin on wherever possible. More nutrients in the skin as well, so I'm told.

Adding cornflour is a new one on me, I will try that. I par boil the chips for about 4 to 5 minutes before air frying which makes them soft because I don't like them overly crispy
