Macao is recognised by UNESCO as being the birthplace of fusion food, some 500 years ago. A delightful mix of Chinese and Portuguese cuisine is unlike anything you’ve ever tasted. Today we head to the local university where they preserve and teach these historic recipes, to try some true Macanese favourites.

He embellishes his facts a bit - there was an explosion in a custard factory, but the largest on UK soil was in a mine in 1944. But I still love him!!

Fun fact. The chef is a danish man who also used to cook in Greenland. So it really is fusion on top of fusion on top of fusion! Anyway have a wonderfull day.

I love how Ollie shares bits of obscure information about the food, places, and people they encounter during their travels. I also find Josh’s open mindedness about their experiences and his sheer sense of wonder at discovering new things to be endearing. It’s so refreshing in this negative world to see these friends sharing fun and interesting little adventures. Watching these videos really makes my day.

Actually the pineapple story is true. There was a documentary on the history of food, pineapple, and gardens. Can’t remember what it was called but it was fascinating. And several of the science facts are true too. Like the explosions. Coffee creamer is notorious for it. So is flour.

I am from a town where it is a symbol of hospitality. When sailors returned home from the sea, they brought them back with them from the tropics. They were no longer good to eat, but the family would put them out on the fence post, as a sign to the neighbors that the son had returned and they could come calling.

8:59 we have “Kue Lumpur” in Indonesia that’s made from potato or pumpkin. But the cakes is topped with a single raisin. When I ate it I just removed it, I don’t like raisin too.😂

I grew up eating Macanese food; the bacalhao, shrimp toast, minchi (especially with the baby diced potatoes), chilicothe, and bebingda de leite (coconut milk pudding). Thank you for bringing back the memories! ❤️

Ollie's absolutely 100% correct about the Victorians renting pineapples🍍 for parties. They were incredibly expensiv,but they were also a symbol of hospitality. 😊

The jaggery egg (assuming the jaggery is what I think it is, which is an unrefined sugar sometimes made from palm trees) brings to mind coconut jam or kaya, except they've swapped the coconut milk and sugar combination with jaggery.

Ollie's story about explosions at 11 min mark have some credence. Here in USA we have had some terrible explosions throughout history in flour mills where the powder like particles caught fire and blew up. also- not Custard but there was once a HUGE spill of molasses in Boston where a storage tank imploded and sent a torrent of it into streets where 21 people and many horses were killed and over 150 Bostonians were injured.

Ollie could genuinely make it as a stand-up comedian 😭 the inkjet thing and the fission food 😭😭😭 Though wagamama is actually great, healthy and easily accessible food on the high streets filled with super unhealthy food. Don’t knock it
