I realize now that such a small fraction of people rely on tourist dollars and for most people it's life as normal and for people that do its easy to adapt to something else and for the rich hotel owners they have already made their fortunes.

When you consider it was shipped in... it's not that bad of a price. about 180 baht more a kilo there in Thailand.

It just dawned on me: oxes tounge is an intensely fatty part of a cow much like waygu but at a fraction of the price however. You boil it with salt, garlic and bay leaves. But you could par boil i.e. part boil it remove the skin and slice into effectively waygu steaks and fry but at a fraction of the price. It is very fatty and delicious so i can imagine what waygu must be like. Methinks ill go for some oxe tonge again after very many years.. Oh geez kidneys too are a favourite of mine hmmm..
