3 tb coffee beans
1/2 softened butter
granulated sugar
3/4 oz flour
bouilli sauce base:
118 ml or .5 cups of milke
2 oz sugar
4 eggs separated (4 egg yolks)
1 oz softened butter
Egg whites:
5 egg whites (using the 4)
1/4 cream of tartar
pinch of salt
1 tb sugar
1 dessert spoon of vanilla

When making soufflé, you should put the buttered ramekins in the fridge so the butter hardens. You will get a way better rise that way as the butter doesn't just melt into the batter

Just a fun baking tip: Instead of water, I have found that using vinegar to clean the bowl for meringue is usually the best!

Honestly thank you for this these videos. I had the most horrible night, didn't sleep a second, was in so much pain and I literally watched your videos almost the entire night and it was so nicely comforting and at the same time I was able to get my mind off the pain. Very daring that you crack and separate your eggs over the one bowl. I always use one bowl for the yolks, one for the whites, and one bowl that I crack the eggs over and isolate each egg's white before adding it to the others. That way, if I get a piece of eggshell in the bowl, it's easier to see and remove. It also helps prevent you from ruining/wasting all your egg whites because a yolk broke in them.

I've been searching channels for years on youtube like this and never popped up your content. KZfaq recommended your channel randomly two-three weeks ago and I'm obsessed with it. I learnt to cook the same way and with the same attitude as you do (with another cookbook). It's a fantastic journey (I started it cca 15 years ago), happy cooking.

You need to go on vacation, take the Silver Fox with you, and do a whole series of pictures featuring you and the Silver Fox enjoying the sights! Congratulations on the best souffles I've seen in some time. Twice in the last 24 hours I forget to add the freshly minced parsley to my hash brown potatoes. It just sat there on my cutting board, glaring at me until I was about halfway through eating the potatoes and saw it... It happens to the best of us. Keep cooking!

You are getting more intuitive in the kitchen - you did well to catch that the egg whites got over-whipped! Congrats on some beautiful souffles! I don't much care for coffee (I never drink it), but I do love a small amount of espresso powder in brownies - just a hint of that takes it to the next level. I will have to give this one a go. 🙂

I was listening to a podcast that said, “it’s important to live life by design rather than emotion. Basically, sticking to a routine is what allows us to be the healthiest version of ourselves (especially when you're fighting these demons ex. OCD for me). I’ve had to overhaul how I approach taking care of my brain (exercise, journaling, studying etc) by practising mediocre consistency. Now I try to put in consistent 50-60% effort into my habits - to make sure I do it I began recording it and posting it on YT. Historically I have a habit of going too hard, not being able to sustain the Herculean effort, giving up and hating myself. So now I’m trying to give a small, consistent mediocre effort everyday. And its crazy how it adds up. Finally i feel regulated enough to begin the journey of learning how to cook! I’m glad I learned about learning slowly because otherwise I would never feel brave enough to tackle a recipe.

Liking the new air of professionalism - brush strokes upwards with the butter in the ramekins, attention to new utensils, voice of confidence 👍. But also appreciated the slip-ups - the sneeze, the forgotten vanilla - that is the old Jamie that we ♥️. Question: does your oven run hot? - in need of an oven heat thermometer? No; its that oven technology has moved on since Julia published her recipes. Modern ovens are much more efficient, so Julia's timings seem to be a bit long.

The hot punch is used to "harden" the flattened top of the soufflé so it holds it's shape as the rest pushes the top up. Similar to crust breads but without the scoring.

4:15-4:21: The special educator in me just lit up. This is excellent instruction: Give pre-information (we are making a soufflé), shows the ingredients and highlights a term the audience may not be familiar with. Shows the audience the word, confirms the pronunciation (says it and provides online audio) and then proceeds to demonstrate. The next step is for the audience to try out the recipe ourselves and then report back with our experiences😊. Also important is to check in with the audience to see if they have any questions: 8:23-8:28 5:41-5:55: Agreed. The coffee drinker in me wondered how much flavor you would extract from beans steeped in milk. Interesting 14:18: I was just thinking that😅

Hello! Future educator here (History secondary education major) and I just wanna say thank you for what you do. I'm currently doing my observation in a special education classroom and the stuff that those teachers and students have to put up with from other students, the district, and parents makes my heart break for them. @@corielldoghc Hello! You are the actual hero. I just completed my Master of Arts in SPED this year. I support post-secondary students by providing them with academic accommodations. I’m not in the classroom. Instead, I work with students and their professors to source, schedule, monitor, and evaluate their services. I liken it to Selpa work. Your work directly in the classroom takes more application of skills. And although I deal with behaviors (for example), it is not in a classroom environment where you are challenged to think “on your feet”. I have the luxury of contemplating my responses through email and phone. Take good care of yourself. Best wishes

I love your channel so much! There's something so refreshing about watching someone who doesn't know everything yet still manages to teach me something. I'm an experienced home cook but I've never delved into Julia Child recipes. Over the past months I've been in an awful depression (something I've struggled with for years) and stopped cooking. Watching you and enjoying your kitchen adventures inspired me to cook again a little, unfortunately that was timed with my stove/oven dying. I did still manage to make a lovely chicken stock and soup with an assortment of counter top appliances. So, thank you for that 😊.

I found your channel a week ago. I have been binge watching your J&J series every night before I go to bed. I am able to shut my mind off after a hectic day and watch you stuggle and/or succeed at making these amazing recipes. And I've enjoyed every minute. Not only is it extremely relaxing and fun to watch, but it's motivational too. I’ve been making my own coffee yogurt lately since I liked the Oui yogurts so much. It’s really good so coffee soufflé has a chance.

Another trick to try when sugaring the ramekins is to put the sugar into one, put the next one upside-down over the first so there is no gap in between, and shake them. A quick tap of the bottom ramekin on the cutting board will shake the excess out of the top one into the bottom one. Up-end the next ramekin onto the one with the sugar, and repeat.

That was awesome. My 13 year old daughter and I love these videos. We've adopted "bowl me" but that just means we hand bowls to each other. Anyway, we really do love these videos!! ❤❤❤
