Chocolate truffles inspire Julia to visit a chocolate factory on this week’s episode. Wine expert Louis Martini from st. Helena, California and guest chef Leslee Reis from cafe Provencal in Evanston, Illinois are featured. The menu includes Curried Oysters, Roast Saddle of Veal and Chocolate Truffles.

I remember when this exact video first aired, I fell MADLY in love with this veal recipe and have made it many times ever since - it is a TOTAL party/crowd pleaser!

I'm a meat eater, but I just can't get over the idea it's a baby animal. Veal production used to be notoriously cruel in its methods, to ensure the whitest meat. I suspect that's why in England at least, it's rarely cooked at home and more typically seen on exclusive restaurant menus.

@@glamdolly30 Hi, Sadly she has passed. Julia had interns on her TVshows and Leslee was in her kitchen when going to school in Boston. This is how they met initial.

How do truffle preparers wash one’s hands, exactly? It almost seems sacrilegious to see all that goodness go down a utility sink.

This is the old school technique. It is considered wasteful. Sadly no one does this anymore.

Interesting seeing how carefree things were back then - no need for latex or nitrile gloves! I suppose we can thank the AIDS epidemic which brought about "standard precautions" like basic antisepsis (spoken as an older RN.)

There was never a need for them. Washing hands frequently is the best antisepsis. Gloves are hygiene theater,worn in fast-food places to satisfy the government on "health inspections". And then there are masks....

Wasn't it amazing to see those ladies rolling the chocolate with bare hands, not an ugly rubber glove or hairnet in sight. The good old days of food production!
