I remember him well. Justin was not born Cajun though he was Catholic and grew up nearby in The Florida parishes which are not among the Cajun Parishes but are heavily influenced by both Cajun and Creole food Culture do to migration over time so he spent a lot of time around them. But Justin Wilson was also a segregationist whom many felt took advantage of and disrespected Cajun culture. His accent is a very strong deep south accent btw not Cajun, but is definitely a transitional French creole influenced Louisiana version of it. Cajun English today sounds quite Southern but is also very distinctive and is significantly French influenced but more like upper Midwest English is German and Norwegian influenced rather then as a Cajun French accent in English. It is not like the standard lower South accent however. In other words, Cajun English today is a uneque and indigenous type of regional Southerner accent and dialect. It is now widely spoken across most of southern and parts of central Louisiana even by many of those without French Ancestry.

Truthfully he was a segregationist, which I’m willing to overlook given the time and area he was raised in, and wasn’t even Cajun himself. He was welsh on his dad's side and his mom had a maiden name (Toadvin) which indicates ancestry from Guernsey but otherwise her genealogy couldn’t be traced properly. What is certain is that neither of his parents were French or Acadian. Justin adopted the Cajun personality and language as part of an act, which was very displeasing to some Cajun people who felt his act was a poor caricature and degrading to Cajun people. That said, he was a great cook and a good entertainer.

He wasn't born Cajun at least not on his father's side though his mother may have been part Cajun. Justin was however a racial segregationist and many felt he also appropriated, degraded and disrespected Cajun culture. His accent was French Louisiana influenced transitional Deep Southernern but was also not a cajun accent btw.

Justin was however Catholic and from rural Southern Louisiana. But he wasn't from the Cajun Parishes but rather nearby in the Florida parishes from Roseland, in an area where many Cajuns have migrated over time and greatly influenced the culture. He also spent a great deal of time among the Cajuns. He was certainly part of and from the "Louisiana French" southern culture in the broad sense of the word, if not of French ancestry himself, though he may have had some.

Oh, how my Late Father loved this show. My Father was cajun and from Louisiana so you can't imagine how happy he was when Justin would come on the TV. He loved his cookin', but most of all his stories and his sense of humor.

Watching this, you quickly realize that for 50 years there were mostly full grown adults on television, in contrast to the past 20 years when it's largely only people under 35 years of age who are on TV. For MY money, Justin Wilson was and still is, the most entertaining TV chef I've had the pleasure to watch.

This was a great man. He was instrumental in influencing several generations of chefs and home cooks. And he did so with a style that was all his own. His good-natured personality, mixed with his little Cajun one-liners were absolutely perfect for hooking in viewers. His legacy continues to live on, and he will always be remembered as one of the best to ever do it. I guarantee!

I remember my mom and dad loved watching "Yus-tan" Wilson every Saturday. I also remember he devoted more time to his Cajun yarns than the essence of his recipes. However, it was clean, funny, family entertainment that will always be missed. RIP JW!!

How ya'all are? •In this video, Justin Wilson makes two dishes. 1)Pot Roast Magnifique & 2)Potatoes au Gratin au Vin. •I've made 'Justin Wilson's Potatoes au Gratin au Vin' many times over the last several decades. The date on my recipe card is July 1980 !! It is deee-licious! And worth making! •In this video Justin forgot to tell us how much wine to use for the Potatoes dish... my recipe card says: 1 cup Sauterne. Add the wine after you've made all the layers. Then put the prepared dish into the preheated 375° F. oven to bake 1 hour. My notes: •Around 2010, I started using Chenin Blanc wine, instead of Sauterne, with outstanding taste results. •A few times I've used Parmesan cheese instead of the Romano. Very good flavor. I like the tang of the Romano, more.

The first time I watched Justin Wilson I fell on the floor laughing. I thought it was a spoof. I soon learned he was genuine and a fantastic chef. A National treasure.

I started watching Mr Wilson early on. I was the only person in the family that watched him. After a couple weeks one other family member would start. And every week or two another. Wasn’t to long before a crowd was gathering for every show. Most never cooked anything ever but just loved him. I’ve cooked many of his recipes and they were definitely awesome.....I gare..own...teee! Miss him and glad I can see him on KZfaq!

I thank God that he let such a wonderful, kind hearted, entertaining man into our lives for such a short time. He is sorely missed, but he lives on in our memories, and his recipes. I hold a glass of wine right now in remembrance to you Mr.Wilson. Although we here are not directly related but we are all his children none the less. Here's to a great man, wonderful cook, and a father to all who cherished him. Saluti.

It just gives me warm feelings in my heart listening to Justin speak and tell stories. He is so genuine and real it is ridiculous. At my grocer, they installed a TV above the meat counter and just play Justin Wilslm cooking videos now. Brings a smile to my face, my kids recognize him, and it's fun to tell other people who he is that just stop and stare at the screen. You were a good guy Justin. The original cooking KZfaqr.

My favorite chef evr in 53 ears of me cookin.!! My best years of cooking came after I visited Louisiana at age 16. I learned from a genuine french speaking Cajun lady. My friend's mother. She cooked to the finite detail as I do now.

It's not actually a Cajun accent though, to be clear. Justin Wilson was not born Cajun but was Catholic and came from the nearby Florida parishes in an area greatly influenced by migration of Cajuns over time. However he spoke with a French Creole and Cajun influenced but mostly Deep South accent, very common to that part of Louisiana. The true Cajun English Accent is different, still Southern sounding but also very uneque and French influenced but now indigenous to the region so spoken by many not of Cajun ancestry as well.

I agree with you, completely! The entire draw to Hell's Kitchen is the drama & watching Gordon Ramsey go into a foul mouthed tirade upon some poorly performing kitchen assistant! Justin, Julia, Jeff Smith (Frugal Gormet), Graham Kerr (Galloping Gourmet) employ kindness & support to make everyone a better cook! It helped me in many ways! One, I am never without an open bottle of wine in my kitchen while I am cooking!

I miss Justin. He was a real cook and his recipes were very good. I have tried several of his dishes and enjoyed everyone of them.

Folks that know me know that my Momma is a wonderful cook and they assume that's where I get my skills. In actuality I used to watch Justin Wilson (grudgingly at first) with my father (Lord rest his soul). He unknowingly instilled a love of cooking shows and subsequently cooking that I wish I had a chance to thank both of them for. Thanks for posting....brings back great memories.

I haven't watched this ol boy in about 10.. 15 years. Watched him back in the'70s when I was a youngster. So enjoyed watching again. Thanks for the upload!
