When ist request made by client sending username & password , Will the server check it's database to ensure the username and password is correct or not ?

the server decode the signature with its secret key and than it hashes the header+payload+signature and check if the hash is also saved on the server?

Na ,hash is not saved on server. It's attached in JWT token itself, after then comparing it by making it again.
