You say that way most the cook of restaurant do like that l can think of some reasons first get the order more faster to done can keep the melon more days why you need i tell you because they put it in the cool water that way it can keep in the fridge for few days so I like that show can keep little bit bitter taste but not too strong bitter taste also easy and simple to make it thanks
Bitter gourd should not be sliced into so thin because each pc should maintain its natural taste. No need to add shalt to soften it because part of the natural taste will be out.Wash in water &crush with hands are out of question.The bitterness can reduce body heat in warm days.Short frying(half cooked) then can mix with eggs ,they should be fried until egg turns light brown to increase its smell.
