Your videos have me about ready to plunge in to Kamado cooking…particularly the Joe Jr. Since I’m not experienced with smoking meats, did you have to add more charcoal during the total cooking time, or did the initial loading last the entire time?

Hi James…..just watched your video on the cook of the pulled pork on Joe Junior, loved it but a question. It was a 12 hour cook on Junior but i remember when you did a comparison of the charcoal lasting times between Joe Classic and Joe Junior…..56 hours for Classic but around 6-8 hours for Junior……how did you manage 12 hours when doing the pulled pork on the Junior?

Can’t wait to see a video on the swivel rack from smoke ware before buying it. Bought the cap and kick ash basket a while ago and love them in the Joe Jr. I also have a Woo Ring from Ceramic Grill store with the handles on it. Makes reverse sear more convenient.

I like the picnic portion of the shoulder. I can usually get those for a lot less than the upper portion and it does make excellent pulled pork.

Hi James…..as always love the Kamado Joe videos. Having recently purchased a Joe Junior I am enjoying the learning curve after 45 years of Weber gas and charcoal. My question…..I am going to attempt a 6-7lb pork butt which watching your video is about 12 hours, will the Joe Junior charcoal load last that period of time, thanks.

I use the SmokeWare top vent on my Monolith. Works great and keeps the rain out. Missing a roof over the bbq area. Man cave in progress.

Got the Joe jr. rolling today with a 6lb pork butt. My normal method is wrap at 165* and take off at 192*. Rest in a cooler for 1-2 hrs. After watching this I think I’m going to leave it unwrapped and let it roll. 🤞 I have to get one of those stainless caps. Looks great for temperature control. Thanks again for all the great vids!

I close the bottom vent first as if you do it the other way it creates an air pressure bomb that can stress the internal components. often this will pop the top vent when closing the dome. so I do bottom vent t first and then the top vent unless I want to keep the fire going longer to burn off the drippings

Great cook! Did you add any liquid to the drip pan? I’m always worried about the dippings burning and giving off a bad smoky taste.

Good question, no i didn't for this one as i was cooking around 240f which is normally safe to not trigger the white smoke from fat but if it became a problem i agree the thing to do is to have some liquid to keep it from happening

ive done a couple pork butts on the kj junior, with and without the drip pan. honestly couldn't really tell the difference but would probably give the nod to no drip pan at all. had a messy deflector plate but just turbo cooked it to a crisp and then easily scraped off all the nasty crusties. no need to buy an expensive drip pan either, just buy a pie and eat it, there's your free aluminum foil drip pan. if desired, you can line it with foil for easy clean up and reuse it.

Good question... you remove the old one and its felt gasket. drop on the base, slide down the rubber gasket that it needs, slide on the top

Bark looks great on that. I didn't know Fogo had a black seasoning as well, will have to try. I know you like to make your own sauces, but give the Black (Gourmet Original) Diana sauce a try sometime on pork. Definitely one of my favs, I always bring back a case after seeing family. Of course there are few other boxes of stuff and some Creemore and Alexander Keith's. I need another trip to stock up!

yes it is the 10” one. I think the 12 might not fit under the grid and or may block 92% of the air flow upwards which might not be good

thats for sure ... big fan of the cap on the jr and i am using that pan more than i have ever used a drip tray before. its nice the round shape doesn't interfere with the smoke like a square pan does on either the jr or the classic

My meater+ shows 20-25 cooler than my Jr temp gauge. Do you usually go by the Jr gauge or trust the meater + ? I noticed your meater was in the top and I usually go in on the side. Would that make a difference? Thanks!

spring and fall i suggest re calibrating your dome as it wanders in accuracy... that being said within 20 is normal for the different placement from the grate level to the dome

After using the ikammand how do you find it compares to your smoking setup? Do you get the same smoking effect with the ikammand and a decreased top vent position as you do with your traditional smoking setup?

i am thinking a head to head as the airflow would be good for smoke ring development .... but so far the only difference that stands out is how much more charcoal the fan uses vs. natural control

I just got the JR so Sorry for all the questions. Lol I’m having trouble keeping it at 250. It likes to stay around 300 with too and bottom vents almost closed. So I ha e two questions. Will that cap on the top help with that. And I have my JR inside my Lanai. It’s all screened I. And most times zero wind. Would a fan help. One more question. For this cook. How much wood did you use?

the basket helps with air flow, the jr is different than the others but holding 250 all day is well within its wheel house. the fire should draw its own air so a fan shouldn't be necessary

Given that the drip pan is on the heat deflector...any problem with the drippings burning and causing bad smoke? Did you put any water in the drip pan to prevent the drippings from burning?

great question, this one i did not as cooking at 230-240 I have found to not get the burning fat white smoke issue that creeps in north of 270f... had that happened absolutely the thing to do would have been to add some other liquid

Did you have to add any coals during the 12 hours? I smoked a 8lb butt yesterday and found I had to add coals around 8 hr mark to keep up the temp. It was a real bummer. Using cowboy lump for reference. Love the vids!

no I don’t. I found I could get a full load of jealous devil to burn for 56 hours in the big Joe so maybe it’s a fuel source difference. the jr should go 12 no problem

I read a few reviews saying the Smokeware cap gets really gummed up and jammed. Did you use olive oil or anything to keep that from happening? I want one, but worried it will seize up after seeing a few videos

every design gums up some... the BGE ReEGGulator, the Kontrol tower top and the smoke ware cap to some extent all are prone to this a bit. This of course depends on the types of things you smoke... if you are doing a brisket or pork butt every couple of days you can expect more cleaning maintenance. The SS is dishwasher safe, and some bar keepers friend makes it good as new in no time. you can also use oven cleaner on it, something that abrasive would remove the finish from the BGE and the KJ tops (BGE is cast iron and can be easily reasoned)

Did my first overnight low and slow pulled pork cook the other night. Came out incredible but I did have a drop in temp that didn't trigger an alarm with my IBBQ-4T thermometer. Ink-Bird support pointed me to use their BBQ-4T app instead of the InkBird Pro app referenced in their manual. I was curious how yours was working when I noticed in a previous video that you were using the BBQ-4T app as well. Did you run into the same issue with alarms not working and switch the app?

I like the probes themselves.... i've checked and they are just as accurate as systems that cost 2x as much. But the app is terrible, I'd be lying to say I have mastered and trust it to perform basic functions flawlessly lol

What are your recommendations on when to use a drip pan and when to leave it out?

good question... i only use it for low and slow cooks when you will be rendering out a significant amount of fat (brisket, pork are the biggest offenders). If i was doing a leaner cut (lets say picanha) prepped and cooked like a brisket to a higher internal temp I might skip it as there is not much fat to be pushed out during the cook

Hello, Greetings from Scotland. I have been following you for a while.. My Kamado Guru. My 9 year old daughter wants me to make Pulled pork while we are on a weekend away. I will only have my Kamado Joe jr on the trip. Plan is to tackle a 2 KG pork shoulder. Not sure whether to follow this recipe or the Pulled pork 101 (I can simulate the double and indirect on the Joe Jr as per your Picanha video). Please help me out.

James, I remember a post somewhere where you described which size smokeware drip pan works best for a classic III. I know you're description says 12 or 14 for the classic, but I feel like there was something more in depth from a recommendation perspective. Do you know what I'm talking about?

the kettle joe has the depth issue, the classic can work with the 14 for max protection and the 12 for mirroring the sloroller

@@SmokingDadBBQ my charcoal went out during the night 😢 Dropped down to about 160°f on the thermometer, still felt warm to the touch. Got it back at 240°f now, hoping I can save it! Wish me luck!

Great video! Would I be able to follow this method for a 5.5lb pork butt or would it need less time? Still just starting out so I'm rubbish at gauging how big the cuts of meat you're using are. Thanks from the UK!

Thanks James for the tip on not looking for a specific temperature and more looking for the feel of the meat. definitely going to try this because I think it might be where I’m going wrong. As I’m always checking for 95c

Did you add more fuel (charcoal) at some point??? I can't get more than 4 hours on a full fuel. And 300F tops. Can you help?

what type of fuel are you using? I normally make it about 12 hours on the jr. with big block or JD

You make the Jr look attractive as like a camping grill or something, but at 68 pounds it seems too heavy for that (not to mention I'd be worried about damaging the ceramic). Pork looked good, but I'd still put the one I made over the weekend in a head to head with yours 😁 How do you know about the megadeath sauce? 🤣

Oh i would love a side by side taste test as this was top 2 for sure on my pulled pork greatest hits. I have taken it places before no problem, but long walks... no way lol. The hot sauce..... oh the burn, it hurt for days

drip pan just helps with limiting white smoke, and makes your deflector not be a mess next time you want to fire it up. yes 1hr rest is good

i prefer hotter and faster as the JR in particular breaths better with a hotter / cleaner fire resulting in better tasting pork IMO at around 270f which the JR has never ran out of fuel for me. holding sub 230f can be tricky on any kamado and the Jr is perhaps the most tricky to keep at those temps for 18hrs. i've not used the jr longer than 12 but again thats because i find the taste better with hotter temps which shorten the time. never have to add fuel

yes you can. if you make your own, go 2 TBSP black pepper, 1 TBSP Lowery's, 1 TBSP diamond crystal salt and 1 tsp garlic and dry brine it overnight
