For Boiling Chickpeas:
Soaked Chickpeas 250g
Salt 1tsp
Baking Soda 1tsp
Roast and Grind Spice:
Coriander 2tbs
Cumin 2tbs
Red Peppercorn 20-21
Kathiawari Cholay:
Water 4-5cup
Powdered Spices 1tsp
Red Chili Flakes 1/2tsp
Turmeric 1/4tsp
Cumin 1/2tsp
Orange Food Color 1/4tsp
Salt 1tsp
China Salt 1/2tsp
Corn flour Slurry:
Water 1/2cup
Corn Flour 2tbs
Chutneys:
Green Coriander 1/2cup
Green Chili 3
Mint Leaves 1/2cup
Hot and Sour Vinegar:
Vinegar 1/2cup
Crushed Green Chili 1tbs

This reminds me of a street food from South of India - Masala Puri. You can try with same ingredients & few simple additions. Take a flat dish, crush the 1-2 papdi into larger pieces & layer on the dish. Then add cooked peas (yellow peas are used instead of chhole) on top. Then add warm gravy (onion tomato masala, semi thick) on it. Immediately top this with chopped raw onions, tomatoes, dhania patta, finely grated raw carrot, green chilli slices. Then add that green chutney, handful of bhujia namkeen & serve. It's a warm savoury chat, doesn't use any sweeting agent separately. Do give it a try 🙏🏻

Today my Amma tired this recipe in iftar.. And believe me it turned out amazing..it was authentic and extremely delicious..must try.❤❤ Plus we also added boiled potatoes cut in dice..and it enhanced it.

Afzal Bhai , you can use mutton stock for the soup. It will be very healthy soup (not vegetarian) and also finishing touch you can add coriander leaves 🙏
