There was a shortage. Due to the culling from avian flu. Chicken wings are by far the most sought after cut from processed chicken. So with the natrual shortage they were getting big dollar from splitting the wings off and not selling whole processed chicken. So KFC etc would get everything but wings and places like Buffalo Wild Wings would pay extra for just the wings.

Lol, i remember i asked for a pound of chicken wings seeing it was 5 dollars a pound, and when the butcher weighed them for a pound i got 5 wings and he priced me 25 dollars. I was shocked and he said they are actually 5 dollars per wing. I told him to put back the wings and give me the thighs priced at 99 cents a pound. Ended up getting three thighs for 99 cents.

I feel like wing places really only proliferated everywhere right around the time of the “event”. Now every little town of more then 30k and pro boy even 10k towns - now all have wing specific restaurants. That really wasn’t a thing like it is now until more recently ! Source : I know small towns !
