They are cooking in palm oil first and finishing with coconut oil. It's as good as adulteration. Banana chips should be fried only in coconut oil.

Palmolein? Kerala chips dont use those. They use coconut oil. Palmolein especially the refined version is super high in cholesterol.

You might have used a different variety of banana. You have to buy that specific variety to get that yellowish color. Ethakaa or Nendrakaya. Check in your local Kerala store

Mostly the Nenthran banana is transported from Trichy and around villages -Tamilnadu and made chips in Kearala due to Coconut oil ,manpower in making it is available at cheap
