Kerala style tasty jackfruit core and seed stir fry
Ingredients :
Jackfruit : 1 nos
Jackfruit seeds : 500g
Jackfruit core : 300 to 400g
Coconut - 150g
Shallots - 150g
Coconut oil - 2 tbsp
Red chilli powder - 1 tbsp
Coriander powder - 1 tbsp
Garam masala powder - 3 tsp
Pepper powder - 1 tsp
Turmeric powder - 2 tsp
Salt - 2 to 3 tsp
Mustard seeds- 1 tsp
Dried red chilli - 2 nos
Curry leaves
Method :
Today we’re going to make jackfruit core and jackfruit seed stirfry
For that first we need a raw jackfruit
Peel the outer layer of jackfruit first and cut it in to 4 pieces
Then cut and remove the jackfruit core and then collect the seed from the jackfruit
Use oil while cutting this so that hands will not get sticky
Now peel the outer layer of the jackfruit seed and cut in to small pieces and set it aside
Then cut the jackfruit core in to small pieces
Then take a piece of coconut and collect some pieces of coconut with knife and then slice those pieces in to small and thin pieces and set it aside
Now peel and wash shallots
Then cut the shallots in to small pieces
Now wash both jackfruit seeds and jackfruit core and then set it aside
Then heat coconut oil in a pan and add red chilli powder , coriander powder , garam masala powder and then pepper powder and roast it and remove pan from fire
Now add jackfruit seeds and jackfruit core , shallots , coconut slices , turmeric powder , the roasted powder and salt in to a bowl and mix ut well with hands
Then heat oil in a pan and add mustard seeds , dried red chilli , and curry leaves , saute it and add the mixed jackfruit seeds and jackfruit core and close the pan and let it cook
By that time grate coconut and then grind it well in a grinding stone and add it in to the pan if the jackfruit seeds and core are cooked
Now mix it well by adding garam masala powder and stir well till it becomes dry
Remove from fire when it is cooked
