Pastry Cream:
3 large egg yolks
⅓ cup (65g) powdered erythritol
1 cup (240mL) heavy whipping cream
3 tablespoons (45g) salted butter
1 teaspoon (5mL) vanilla extract
¼ teaspoon (0.5g) xanthan gum
Cake:
4 large egg yolks
½ cup (100g) granulated erythritol
1 ½ cups (150g) blanched almond flour
1 teaspoon (4g) baking powder
1 teaspoon (5mL) vanilla extract
1 tablespoon (15g) melted salted butter
2 tablespoons (30mL) unsweetened almond milk
4 large egg whites
¼ teaspoon (2g) salt
¼ teaspoon (1g) cream of tartar
Ganache:
2 ounces (60g) sugar-free chocolate
¼ cup (60mL) hot heavy whipping cream
Bake at 350°F (177°C) for 25-30 minutes until toothpick is clean when inserted.
Refrigerate for at 2 hours before serving.
Yields 8 servings (macros per serving)

Ganache:
2 once (60 g) di cioccolato senza zucchero
tazza (60 ml) di panna da montare pesante calda
-Scalda la panna a fuoco medio. Non bollire.
-Stemperare lentamente le uova unendo alle uova la panna calda, mescolando continuamente.
-Cuocere a fuoco medio fino a quando non si addensa leggermente.
- Refrigerare fino al momento del bisogno.
-Infornare a 350 °F (177°C) per 25-30 minuti fino a quando lo stuzzicadenti non sarà pulito quando inserito.
-Versare la panna calda sul cioccolato e attendere 1 minuto prima di mescolare.
-Riponete la torta in frigorifero per 2 ore prima di servirla.

2 cuillères à soupe (30 ml) de lait d'amande non sucré
4 gros blancs d'oeufs
¼ cuillère à café (2g) de sel
cuillère à café (1g) de crème de tartre
Ganache:
2 onces (60g) de chocolat sans sucre
¼ tasse (60 ml) de crème à fouetter épaisse et chaude
-Faire mijoter la crème épaisse à feu moyen. Ne pas faire bouillir.
-Tempérer les œufs lentement en ajoutant la crème chaude aux œufs, en remuant continuellement.
-Cuire à feu moyen jusqu'à ce qu'il épaississe légèrement.
-Réfrigérer jusqu'à utilisation.
-Cuire au four à 350 °F (177 °C) pendant 25 à 30 minutes jusqu'à ce que le cure-dent soit propre lorsqu'il est inséré.
-Verser la crème chaude sur le chocolat et attendre 1 minute avant de mélanger.
- Réfrigérer le gâteau pendant 2 heures avant de servir.

Eating on your Eclairs I made Sunday (double batch of the cream) and made the eclair pastries last night. I keep in sealed glass container in frig and munch on for nearly a week. LOL 😋

Tried this last week. It was amazing! The cake was fluffy and was very similar to a regular cake. Usually when I've made keto cakes before the cake is pretty dense, but not this one. I think folding in egg whites really made the difference. I didn't have chocolate chips so had to make a different ganache for the top. Thanks again for a great keto dessert!!

Absolutely lovely! I don't have 6in pans, so can assume if I use 8in pans the cake would come out thinner. So, can you tell me what changes I would have to make to ingredients, in regards to increasing the amount.

Hola querida, la crema batida espesa es lo mismo que la crema doble en el Reino Unido. El contenido de grasa debe ser al menos del 35%.

I made this a second time with the right sized cake pans this time 😂👍 I did notice my cream filling was runny when I put it in the fridge is that OK? It definitely didn’t look as thick as yours did even before chilling it. EDIT: 5 hours later it still hasn’t thickened. Can I take it out and use my hand mixer? Not sure what to do 😯 it’s not going to be thick enough to spread on the cake. So sorry to bother you! I appreciate your kindness 😊❤️

Hello dear! You can increase the amount of xanthan gum. I guess add another pinch to help it thicken. Also do not stop mixing your pastry cream in a very low heat, it will thicken after like 15-20 mins.

My cake didn’t turn out anything like yours 😔 I guess my round cake pans were too big because I didn’t have much batter to fill both so they turned out skinny. Also the filling didn’t harden enough and kept squishing out between the cakes. The taste is SO GOOD though! My family is just going to have to deal with the presentation 😂 Taste is what counts anyway!

Aww.. thank you dear! Glad that you still enjoyed it. ❤️🤗 Your custard might need a little more time to thicken. Just continue mixing in a very low heat until you reach the desired consistency. Also you can double the recipe if you have a bigger pan.
