Since there aren't a lot of instructions about cocktail foams on KZfaq, today I’ll show you how to make an Inverted Clover Club with Raspberry Foam using raspberries and soy lecithin. But first thing’s first - the story and the recipe of this pre-prohibition cocktail with a recipe that I like the most (since you can find a lot of different variations of this great foamy cocktail). At the end, I compare the original Clover Club with my Club Clover and give you my honest opinion. Find the recipes below.

Raspberry syrup:
· 250 g frozen raspberries
· 200 g water
Add to a pot and place on medium heat and let simmer for 10 minutes, while stirring occasionally. Strain through cheesecloth while still hot. I place the cheesecloth with the raspberries in a potato ricer to get out as much juice as possible.
Measure out 150 ml of raspberry liquid (you will use the rest for raspberry foam) and add 150 g of sugar. Stir to dissolve and let chill before bottling. Before you bottle it, start making the red raspberry foam with the leftover raspberry liquid.
The bottled raspberry syrup should be good for at least 3 weeks in the fridge. Besides the Cover Club, you can also use it in a refreshing soda or with some pancakes.
Red Raspberry Foam:
· 140 ml raspberry liquid (or the amount you were left with from the previous step)
· 3,5 g soy lecithin (2,5% of the liquid amount)
Add the soy lecithin to the raspberry liquid and blend the mixture for at least 30 seconds. Set it aside for about 15 minutes for the lecithin to do its magic. While you wait, use up the pressed raspberries from before by making raspberry leather.
After 15 minutes create foam by getting as much air into the mixture as possible. I used a handheld milk frother, but an immersion blender would work too. Set aside to settle a bit and start making the cocktail. You’ll then carefully spoon the foam on top.
Raspberry leather:
Scrape out the pressed raspberries from the cheesecloth and weigh them, and add sugar, ½ the weight of the raspberries (I had 64 g of raspberries so I added 34 g of sugar). Stir to combine and hopefully the raspberries will still be hot enough for the sugar to dissolve. Then spread the raspberry purée evenly and thinly on baking parchment paper and place it in the food dehydrator for 5 hours, set to 60° C or 140° F. You can also use an oven, set on the lowest temperature setting, for about 3 hours. Peel the fruit leather off the paper and cut or tear it apart.
Classic Clover Club:
· 45 ml (1 ½ oz) gin
· 15 ml (½ oz) Dry Vermouth
· 15 ml (½ oz) lemon juice
· 15 ml (½ oz) raspberry syrup
· 15 ml (½ oz) egg white
Shake it with ice, discard the ice and give it another shake. Double strain into a chilled coupe glass and garnish with raspberries (I love using the freeze-dried ones).
The Club Clover:
· 45 ml (1 ½ oz) gin
· 15 ml (½ oz) Dry Vermouth
· 15 ml (½ oz) lemon juice
· 15 ml (½ oz) simple syrup
· 1 drop of 20% saline solution
Shake well with ice and strain into a chilled Nick & Nora glass. With a spoon slowly add the red raspberry foam and place the fruit leather on top.

If you will make this foam in a bar, then it's better if you do it in a siphon and store it in a fridge. I would add some xanthan to the mixture, for the longer-lasting foam. If you don't want to use a siphon, then store it in some closed jar. Thank you!

Great video as usual! I just have a couple of questions. When using egg white, I've always seen first dry shaken and then shaken with ice. Is there a reason you're doing it the other way around? And also, I've only got Noilly Prat and Lillet blanc at the moment in my house, is there one you'd recommend over the other?
@KevinKos
@KevinKos 3 жыл бұрын
You can do that as well. But I find that if I first shake it with ice (and with that chill it) I get a thicker foam. It's the same with cream. If you whip it chilled, you will get thicker cream quicker than if you do it at room temp. I would rather go with the Noilly Prat, but Lillet Blanc can give you interesting results as well. I would miss the dryness if I would go with Lillet. Thank you!

Hvala. Pena je ok, če se porabi v treh dneh (razen tiste z beljakom, katere naj bodo raje uporabljene še isti dan). Na kanalu je že kar nekaj penic brez beljaka. Methocell, gelatina, pectin, sojin lecitin... Hvala!

How long can you keep the emulsified foam? Can you store it for a couple of days and just put it through the blender again when it goes flat?
@KevinKos
@KevinKos Жыл бұрын
You can put it in a blender after it does flat. Use it in two days.

Random question: how long does the raspberry foam last in the fridge? Could you pre batch some in the day for use in the evening or does it need to be used pretty much right away?
@KevinKos
@KevinKos Жыл бұрын
You can pre-batch it for a day or even a day after. In this case, rather use the Isi siphon.

What do you say about adding one shot of vodka in the syrup to increase its shelf life?
@KevinKos
@KevinKos 3 жыл бұрын
Nothing wrong with that. I am making ingredients as I was doing it in the bar I worked at, and making it without the vodka means that I can use it in some mocktails, ice tea, etc. But if you are making it at home, and if you don't know if you will use it in a month, it's better to add a shot of vodka. I am not sure how much it will extend the shelf life but it will, at least for some days, for sure.

@KevinKos

It's hard to clean it, but I cooked them in boiling water and I also add some baking soda and vinegar while doing that. After that, I wash them again only with water. I hope, that I helped a bit with the cleaning part too.

Hey @kevinkos did you use soya lecithin granules or powder . Followed this using granules and it took forever to foam. How long did it take yours to foam?
@KevinKos

It's best if you use one in the powdered form. However, I couldn't find it initially, so I used the one in granules. It also works, but it needs more blending.

@@KevinKos can i ask how long it took for yours to foam. Mine took a good while. Mine did end up foaming after letting it settle but the was about a 2.5inch layer of foam and underneath was liquid.

Technically, in terms of getting people to drink less alcohol, prohibition worked. People drank wayyy more pre-prohibition then they did after or do now, but in terms of every other aspect it was a failure, crime rates went up, and people just made their own alcohol, which could be dangerous because people used denatured alcohol because it was easier to get.
