Non-Alcoholic Bitters are just what you need to kick off this Dry January, but will it be Aromatic or Orange? Today I’ll show you 2 recipes for how to make alcohol-free Aromatic (inspired by Angostura) and Orange (inspired by Regan’s) Bitters, taking inspiration from the specs and techniques shown in the book “Zero: A New Approach to Non-Alcoholic Drinks”. We’ll use glycerol instead of alcohol to extract flavors and we’ll start with first a sous vide method for bitters - which has appeared before on the channel - followed by a stovetop technique that will make it easier for everyone to make these at home! This can be the beginning of a series of episodes where we’ll make zero-proof spirits, liqueurs, amari and of course mocktails - if that’s what you’d like let me know in the comments! Non alcoholic cocktails are such a second thought where I'm from and work. Its so depressing when mocktails are just juice and sugar. Glad there's videos coming out to support the sober drinkers. Nothing worse than everyone having nice drinks and that one person has a coke

I made an amazing mocktail for new years eve this year. 2oz over-extracted Earl Grey Tea 1/2oz Orgeat 1/2oz Lime Juice 1/2oz Ginger Beer It was very good. If I was to do it again, I'd maybe add an egg white, and use ginger beer like a seltzer for fizz-style cocktails (or half/half??). If I had these non-alcoholic bitters handy, I'd throw them on top for presentation and aroma.

Try out some different peels like bitter orange (Citrus × aurantium L) or bergamot oranges and maybe potassium sorbate can help to extend the shelf life of the bitters. In general I wonder if it's possible to make alc.free gin at home using something like a steam juicer.

Great episode. To see if you like the idea of bitters alone, try adding some you already have to club soda. I have been adding regular bitters to club soda for about a year. Not all of them are great, but I found that a dash of Regan's orange bitters in a glass of club soda is a lot like Seedlip Garden, a non-alcoholic distilled "spirit." It's pretty good any time of day. Even if you're not going dry for January, adding bitters to club soda is a good way to cut out sugar and diet soda.

I was sooooo excited when you showed that book. I went straight to google just to be disappointed that there's no way to get it to Spain. At least not under 100 euros. I usually do my cocktails non alcoholic. I have the originals with alcohol in my repertoire, and I drink them from time to time or serve them to friends, but normally I only do non alcoholic. Its easy if you aren´t looking to replicate exactly the original flavour, you can get really nice drinks. But if you have to imitate, I think the easier to do are vodka or gin cocktails, as vodka usually has no flavour, and gin has great non alcoholic options.

Another terrific video, Kevin! I imagine I've got no fewer than 12-15 different bitters. Only one or two of them are alcohol free, but a few of the brands out there make them. I've often thought of making my own bitters so this is great inspiration.

Very nice, personally I'm a fan of old fashioned sodas myself, I even got a book about it called "Fix the Pumps" which has a lot of classic recipes from the time...back when a milk shake was ACTUALLY shaken in a Boston shaker and stuff like that, I've made a few and some recipes actually do call for bitters even for the non-alcoholic drinks to add a little extra flavor. I kinda wish there was a KZfaq channel like this but for old fashioned soda fountain drinks...you'll find an occasional recipe done here and there but not a whole channel dedicated to stuff like egg flip drinks or milk shakes done in a Boston shaker and with either egg whites, egg yolks, or whole eggs in them...which to be honest I was dubious about as my stomach is not a fan of eggs by themselves..but I can use them in recipes and the texture of a shaken milkshake with a whole egg cracked into it a rather novel experience for someone in the modern age who's used to the kind of milkshakes from fast food places or ice cream shops. Also your mustache is nicely curled sir..I'm trying to grow mine out to do that but it's a chore to make sure both sides are the same length.

Hey Kevin. So glad that you have started exploring 0-proof world! Have you ever done extracts, bitters or other things with percolation method? It seems like it's pretty easy and fast way to make extracts. I think that with this method you can do better bitters, more flavorful than with sous vide. It may seem scary for some people, because the chemical stuff, some weird glass tubes, but it's really simple to use. I've been thinking about extracting with alcohol, then evaporate the alcohol. What do you think? You can evaporate it in sous vide in 80-90°C, but I don't know how long would it take.

You should be able to evaporate ethanol at around 76C - 80C to 90C would be boiling it off quite fast I would think. Probably best in a well ventilated area away from naked flame too! I need to look at the percolating method - sounds interesting!

For these suspensions I'd try a way to centrifuge filter them, but making that would be an ordeal by itself.

I have been reading quiete a lot of book on cocktails from liquid inteligence to dead rabbit book. I wouldn't do this extra step for bitters because you might lose a lot of flavor.

This made me laugh... We are not using alcohol for extraction, but instead, we use glycerol. Which... yes, it is not ethanol, but chemically speaking is still an alcohol. 😂

I understand non-alcoholic "spirits", but I don't get non-alcoholic bitters. The amount used is so small that there is no need to remove the alcohol. I don't see people looking for non-alcoholic vanilla extract.
