Stephanie Jaworski of Joyofbaking.com demonstrates how to make Key Lime Tarts. A Key Lime Pie was first made in the Florida Keys, which is also where Key limes are grown. In this recipe we are making the pie in tart form. The tart is made with a crispy pastry crust that is filled with a creamy smooth lime flavored filling, and topped with lots of whipped cream.

This is an incredible recipe. I especially loved the pastry crust. Last year I was in Key West and was told by a local baker that "traditional" Key Lime Pie is never topped with meringue (or whipped cream for that matter), but then I went to the Blue Heaven restaurant in the Bahama Village, ordered a slice of pie and out came this huge slice with clouds of white fluffy meringue. It was heaven and so are your tarts. Your filling is actually better. I topped it with vanilla flavored Italian meringue. So decadent.

OK, I am so enamored with my new mixer that I love doing the egg whites! I used to be the egg beater for my Great Grandmother who used to bake a lot and I remember my arms getting soooo tired! Anyhoo..I will make this! Yay! Absolutely LOVE all of your recipes!

Hi Stephanie, thank you for your great videos and recipes. I baked these tarts yesterday and they tasted really great. I'm using regular lime as I can't find key lime juice here in Singapore. All your recipes work for me, as I always get the result I'm looking for. Can you please show us how to make canelés as well as sourdough bread? Thank you once again.

We used to get Key Limes from Florida in the US but all of the those trees were lost due to freezing conditions one year. If we get them at all they come from Mexico which has the hot climate that they need to grow in. The Key Limes are sweet like oranges, Mexico garnishes with them with almost at every meal. You can purchase Key Lime juice at King Arthur Flour.com and maybe Amazon.com. You owe it to yourself to try the best first being Key Lime.

I always get a kick out of you reprimanding those of us who still do not have a scale, I know I know I promise I am going to get one, however it led me to this thought: have you ever considered doing a quick video showing us and naming all of the utensils that you use? I think it would be great. Your scale, your spatula, the types of knives that you use, rolling pin. all the brand names and most of us are Savvy enough that we can find out where to purchase these items. Oh and p.s., what is that red item sitting on your stove top in the background? oh and I love how you include the dog at the end of the videos.

Hi! Great recipe! Love your videos. I did notice when you took out the beans/parchment paper after pre-baking the tart shells that it looked like you had docked the pastry bottom and you didn't mention that before preparing them for the oven. So they should be docked as well as filled with beans before baking? Thank you.

Yes, I forgot to mention that in the video. The written instructions do tell you to prick the pastry before baking.

is there any advantage of using tart rings over the conventional tart pans.i want to buy them.which one do u suggest

I would suggest tart rings as it tends to be easier to remove the tart from the ring. They do also tend to be cheaper! Better yet, I would suggest using an 'entremet' ring if you can find one, it's similar to a tart ring but without the ridge around the rim so you get a more perfect looking tart. It also allows you to decide exactly the height which you'd like to make the tart e.g. if you buy a 35mm entremet ring, then you can make a 2cm high tart or a 3cm high tart perhaps for like a chocolate tart or pecan tart where you want it to be deeper :)

Key limes do have a slightly different flavour but you can certainly use regular limes in my opinion and they should still be delish! :)

I am still trying to find a well made decent scale that goes up to 10 pounds. But, 15 would be even better. If I could get something between those I would be happy too. I would love to have one that did not only pounds & ounces but also grams, ml and so on. can you recommend one that you know will do all of that. Thank you very much.

Yes he's ours. His name is Baxter and actually he's an Airedale Terrier. They look like a Welsh only twice the size.

Yes, you could use this pastry to make other kinds of tarts. This classic recipe for a Key Lime Tart uses condensed milk. I'm sorry, but I don't know of a substitute.

Can you distinguish between a pie made with key limes and a pie made with a "plain" limes? I've never tried it, but if the key limes are more expensive and there's no difference at all, why not making them with a "plain" limes?

Key Limes do have a slightly different flavor that regular Limes. Some people can tell the difference. A "traditional" Key Lime Pie is made with Key Limes. While I prefer the flavor of key limes this pie is also very good with regular limes.

hi...kept the dough in the fridge, wrapped in plastic wrap but after 6hours it became very hard....what to do now...help

It will become firm after refrigeration. You can just leave it on the counter for a few minutes until it becomes soft enough to roll out.
