Nan Khatai Written Recipe With Directions:
Ingredients:
-Clarified Butter (Ghee) 1 cup
-Icing sugar (peesi hwi cheeni) 1 cup
-Green cardamom (hari elaichi) 4 (remove the peel and grind the seeds)
-All-purpose flour (maida) 1 cup (strain well)
-Chickpea flour (Besan) 2 tbs (strain well)
-Semolina (suji) 1 ½ tbs (strain well)
-Baking Powder ½ tsp (strain well)
-Baking Soda ¼ tsp (strain well)
-Almonds (badam) or Pistachio (pista) or char magaz
-Egg yolk (Ande ki zardi) whisked as required
Directions:
-In a pan, add clarified butter and melt it. Bring it out in a bowl and place it in the refrigerator for 20 minutes.
-Now, bring it out on a plate and add icing sugar and green cardamom. Mix well with the help of fingers, an electric beater (slow speed), or a dough machine.
-Add the all-purpose flour, Chickpea flour, semolina, baking powder, and baking soda. Knead it with the help of your fingers until soft dough is formed.
-Add 3 tbs all-purpose flour and knead it well.
-Take a mixture and make small balls.
-On the pizza tray, place nan khatai balls.
-Place it in the refrigerator for 10 minutes.
-Bring out the nan khatai and egg yolk wash, and add almonds on top.
-Preheat the oven for 2-3 minutes.
-Bake the nan khati for 20 minutes at 150 C.
-Let it cool, then dish it out.
-Serve and enjoy.
Tips and Tricks:
-If the mixture becomes runny, you can add more all-purpose flour
-When you are Baking the nan khatai in an aluminum tray or any other tray, use butter paper.
