Hi Samiran - the heat is reduced once the milk starts boiling and then the rest of cooking is done on low heat with constant stirring and scraping from sides to avoid burning

Hi Niharika - it is condensed milk which is regular cow's milk from which water has been removed and sugar added. It is usually available in most grocery stores in cans.
