The reason why defenders often fall to the ground if a player switches direction quickly is speed, if you're running at full pelt, you can't turn quickly. Defenders also go to ground when they try to block shots but if the player feints or changes direction, you're already committed.

Any Ronaldo video, as he was great too, then there are pretty much endless names of really good players. Ibrahimovic who retired recently at 41 is one of those names.
