INGREDIENT:
============
SPONGE CAKE COCOA 25 x 35 cm

- 4 eggs
- 75g sugar
- 15g cocoa
- 60g flour
- 3g baking powder
- a pinch of salt
- 10ml vegetable oil
🔥 180 ° C (heat down and up, no ventilation)

WALNUT SPONGE CAKE 25 x 35 cm

- 5 egg whites
- a pinch of salt
- 100g sugar
- 100g ground walnuts
- 40g flour

⏰ 10-12 minutes
CHOCOLATE AND VANILLA CREAM
---------------------------------------------------------
- 5 yolks
- 500ml milk
- 200g sugar
- 70g cornstarch
- 200g milk chocolate
- 140g butter (at room temperature)
- vanilla essence

WHIPPED CREAM
------------------------------
- 200g whipped cream (30% fat)
- 200g mascarpone
- 70g powdered sugar
DECORATION
----------------------
- chopped roasted walnuts
METHOD OF PREPARATION:

SPONGE CAKE COCOA

Beat eggs with a pinch of salt until they double in volume.
Gradually add the sugar.
Add the oil and mix.
Add flour and baking powder and mix with a spatula.
Add the cocoa.
Put the obtained composition in a tray with a diameter of 25x35 cm.
Bake at 180 ° C for 17 minutes.
WALNUT SPONGE
------------------------------
Beat the egg whites with a pinch of salt until you get a strong meringue.
Gradually add the sugar.
Mix the flour with the walnuts and add the meringue.
Stir in with a spatula.
Place the obtained composition in a tray with a diameter of 25x35 cm.
Place the pan in the oven at 180 ° C for 10-12 minutes.
CHOCOLATE AND VANILLA CREAM:

Mix the yolks with the cornstarch and 50 ml of milk.
Put the remaining milk (450ml) in a pot and add the sugar.
Bring the milk to the boil.
Add the yolk mixture over the milk and stir continuously until it thickens like a pudding.
Divide the cream into two bowls.
In the first bowl add 450g cream.
In the second bowl add the remaining cream (approximately 300g).
In the second bowl (300g) add the chocolate and mix.
Add 70g butter at room temperature and mix well.
Set aside until it reaches room temperature.
When it has cooled, add the rum essence and mix for 1 minute.

When it has cooled, add the vanilla essence and mix for 1 minute.
WHIPPED CREAM

Put all the ingredients in a bowl and mix until you get a thick cream.
ASSEMBLY:

Spread the chocolate cream.
Put the top on the nut.
Spread the vanilla cream.
Put whipped cream on top and garnish with fried walnuts.
Refrigerate overnight.
