I agree , but milk is used when u make the omlette in butter , milk with the egg batter will get spoiled in oil and the taste will be damn bad . so water might not be the right choice but it's fine when u take oil in consideration

I am not justifying the price but he is a chef and also participated in MasterChef India show .You can't compare his price with some street side vendor. He owns 3-4 outlets in Jaipur. If only ingredients cost decides the price 5 Star hotels would have been selling omlets in 20-30 Rs. Chef skills also cost money.
