Your pastry is nice Sir but is not puff pastry. Puff pastry, also known as pâte feuilletée, is a flaky light pastry made from a laminated dough composed of dough and butter or other solid fat. The butter is put inside the dough, making a paton which is repeatedly folded and rolled out before baking. Also the dough of puff pastry needs a good kneading to have good elasticity the dough. After that leave the to rest in a cool place and then add the minimum 35 per cent of your dough butter or margarine. Not all butters are suitable for this type of dough. For me the best puff pastry and also croissant is the quality of butter or margarine which they have good flavor and also have the ability to boost the dough up while baking so the pastry is lighter and flaky.

Yes, this is fast puff pastry, sometimes called quick puff pastry or rough puff pastry. It's less formal than classic puff pastry, but is absolutely still a delightful and welcome member of the puff pastry family. Happy baking! Kat@KAF

I see but why you do with this way and not with proper way. What are deference between quick poof pastry and the original puff pastry and let me know which one of two is better? British pastry which they do the pastry with same way as you but they don't folding the dough and the pastry is very similar like your pastry. It's called shortcrust pastry with pastry butter. Also tell me your opinion what is the reason to fold the dough with no any laminating butter inside the dough. Just tell me one technological reason.

Hello, this method is done for speed reasons, in order to have finished puff in a shorter period of time. It's called rough puff, quick puff, etc. for that reason. Kindly, Annabelle@KAF
