Martin shows you how to make a Mortadella Pizza Sandwich. Starting with a Neapolitan-style pizza dough, these sandwiches are filled with mortadella, burrata, peppers, spices, and all kinds of delicious ingredients after the easy-to-make dough is baked. In his vegetarian version of the sandwich, Martin fills the pizza sandwich with fresh mozzarella, roasted beets, spinach, grated Parmesan cheese, and Sriracha mayonnaise.

Oh my goodness, that is a mouth watering sandwich! As far as content, Martin and Tucker always have each other’s interest when filming the bake. That’s teamwork. Never mind how together they bring the best recipes to us viewers.

That sandwich looked good 👍. I myself would want to add some thinly sliced tomato with a bit of fresh chiffonade basil, give it maybe just a few sprinkles of balsamic vinegar 😋 .

I make this same sandwich for my family. I fry the dough, grate some Parmesan cheese, mortadella, provolone cheese and sprinkle some fresh thyme. I will try baking the dough next time I make it . Definitely add lemon zest and pistachio and the Burrata. For sure it's yummy.

@@HavenUpsurgeflatten it like your making personal size pizza. Rest the dough for about 10 min. Fry dough on both sides until golden brown.

I recently learned of a bread made in Naples called Panuozzo, made from pizza dough. Very similar to what you made and I’ve seen them fold it over like you did. The one I’ve seen and made looks very similar to Ciabatta. Love the KA and Martin videos. You showed me how to shape baguettes, I believe with your Son.

Hi just wondering why you turn the dough when you shape it and what do you mean when you say « if it’s fighting you »? I’m a beginner pizzaiolo and and don’t really see any difference when I do it

Great questions! Turning the dough ensures that you get a nice even shape without any sections that are over-stretched. Dough is said to be "fighting you" when you try to pull it out and it immediately snaps back to its former shape, or resists stretching at all. If you go nice and slow and allow your dough to rest and relax, your dough will stretch out instead of snapping back or tearing. Hope that helps! -🍮Kat

In the Ooni I think I used around 750-800°F. HOT!

Love the Ooni! We shot a version of the sandwich using the volt but the video ran too long. The Ooni definitely makes something closer to the classic version. So good!

This is a takeoff on the place in Tuscany where you have to wait in long lines to get this sandwich. It's on DeNeri Street. It's called Il Paradiso From All’Antico Vinao. I like to add the Pecorino to the Burrata and then add the Pistachios and mix well. It makes a really creamy sauce. Then sprinkle some more Pistachios on top of the cheese. When adding the Mortadella you want to include as much air into the meat as you top it. Don't fold the meat before adding it. The place in Tuscany uses a bread called Schiachatta. You can find recipes online but this one looks pretty good too.

I fold it after frying. The pizza dough is quite playable even after frying. If you get a chance to try it , please let me know how it turns out for you.

The recipe says to do stretch and fold procedure 4 to 6 times, and to unconfuse me, does this mean stretch the dough working around the bowl 4 to 6 times (30 total minutes of rest), or rather do *this*: [rest 30 minutes, do your stretch and folds] 4 to 6 times (like 2-3 hrs of rest)?

Tried this recipe and dough did not rise. Checked all reasons why... no good answer. Other recipes use more yeast than 1/8 tsp...ugh
