The Kiritsuke chef's knife is a hybrid of the Gyuto and Yanagi, two distinct Japanese chef's knives.
It is longer than the Gyuto, but unlike the Yanagi, it has an angled tip also called "Reverse Tanto" or
“K-tip.”

You always ask us to share our opinion… I’ve been a professional chef for over 27 years now. Absolutely love your videos by the way hands-down some of the best I’ve seen as far as caring meats goes that being said those knives are made out of 440 C carbon, fiber steel, which is basically a fancy way of saying stainless steel with a little bit of different steel in it great out of the box, but when it comes time to sharpen them the right way with Stones there absolute fucking nightmare to get right, the steel is hard and unless you know exactly how toI use your stones the proper way chances are you’re going to mess it up and those have a 15° angle on it which is a very aggressive angle and extremely hard to get right
