When the kitchen floods, applicances break down, and we are thinking of ordering take-out, I choose to see it as an opportunity to get creative with a recipe that defies all problems - a southwest-inspired vegetable soup that can be made with whatever you have on hand. And it's always healthy, hearty, and delicious!
Southwest-Inspired Vegetable Soup
Chicken broth (homemade, canned, or bouillon cubes)
Onions, chopped (fresh, frozen, or dried)
Assorted vegetables (fresh, frozen, canned, or dried. Suggest: beans, corn, tomatoes)
Jalapeno pepper, diced
Chili powder (to taste)
Ground cumin (to taste)
Garlic (fresh or dried, to taste)
Salt and pepper (to taste)
Rotisserie chicken or canned (to taste)
Throw everything in the pot in whatever quantities you want/have and hope for the best! Wait until just before serving to add the chicken so it does not overcook. You might surprise yourself. Delicious served with grated cheese, slices of avocado, cilantro, a touch of fresh lime juice, or even the crumbs from the bottom of the Dorito bag!
