Hello my fellow Chef Knives Enthusiasts.
I went to visit Ries Geurts in picturesque Weert.
Ries managed to get his hands on and collect a whopping amount of THIRTEEN Keijiro Doi knives. And even two from Kazuo Doi, Keijiro's father.
Keijiro Doi is considered to be one of the best to ever do it by Japanese knife connoisseurs. These are not easy to obtain knives. To have amassed a collection of thirteen of these is impressive. And crazy. I mean. How? Why? Is Ries insane? A clever investor? For sure he's addicted!
Keijiro Doi passed away in 2017.
Keijiro's son, Itsuo Doi, is one of the most recognised blacksmith's from Sakai at the moment. When Itso Doi dies, it will be the end of an era. The Doi knife era.
Big shout out and much love to Ries, for inviting me in his home and talking with me about his Keijiro Doi knives.

Knife envy is a genuine issue. Addictions can hit you, even as an old fossil. My passion are Nakiri, conspicuous in their absence here.

I read in your bio you're a private chef, I'm retired know, but use to work in the family restaurant on Sardegna Italy but also worked as a private chef on yachts of some very wealthy people. I once had a customer on a yacht in Porto Cervo, this guy had a collection you wouldn't believe, he had two temperature and humidity controlled rooms aboard the yacht, one for his cigars and one, because of the salty sea air, for his Japanese knives. He also had quite a few Doi family knives, among others, but also some custom made Tamahagane knives from Yasha Yukawa, absolutely stunning. Have you ever come across a real Tamahagane steel knive? They must be the rarest of the rarest.

That sounds awesome. Yeah, I sometimes cook at some wealthy peoples homes, but never came across someone with a Japanese knife collection like that. I did came across a few Tamahagane knives and some Katana's. Very rare indeed. Beautiful. Highest level of craftmansship and dedication. At Meesterslijpers we have a Takaba Hiromune knife which says it is made from Tamahagane, but most likely is made of Watetsu. I do own a Kyoshi Kato knife myself (not made of Tamahagane). He's a licensed sword smith. And his knives are straight up unicorns, really hard to come by.

My pleasure. I dis see a Kazuo Doi knife in a picture before, but never with my own hands and holding it in my hands. Ries has an awesome collection of Doi knives!

It sure is. I'm actually a bit sad that he stopped hunting/collecting them. Imagine how many Doi knives he would have in 10 years.

Wow ! Very impressive collection ! I have a Sakai Takayuki Aogami 2 ebony handle Yanagiba I am fairly sure it was forged by Keijiro Doi, but if it actually is it was from his latest blades. I Bought it in 2014, about a year after Keijiro Doi retired. A time when Keijiro Doi's knife were still available in a variety of retailers. Bought it from a Japanese reseller who happened to promptly update its pages when he transitioned to Itsuo Doi stock. So I am fairly confident mine is a Keijiro But with this series of knife it is (to my knowledge) impossible to be absolutely sure ... If you happen to know how to identify with certainty my yanagiba origin, I'am interested !
