If you slow down the speed (and turn down the sound since it is annoying at slow speed) as much as you need you can see the detail very clearly. When I need to count the stitches or see which loop she went into I turn it all the way down to .25. I assume you know how to do this but just in case … go to the gear wheel in the upper right of the video and you can choose the playback speed you desire.

This is Tunisian Crochet so maybe looking at other Tunisian crochet videos will help you become familiar with the process. Also slow the video speed down to .25 and you can more easily see the stitches.
