Sure, here's a recipe for Shimla Mirch Bharwa (stuffed bell peppers), a popular Indian dish:
Ingredients:
- Bell peppers (capsicum): 2 medium-sized
- Potatoes:1 large, boiled and mashed
- Peas: 1/2 cup, boiled(optional)
- Onion: 1 medium, finely chopped
- Carrot: 1 small size, finely chopped
- Green chilies: 2, finely chopped (adjust to taste)
- Ginger-garlic paste: 1 tsp
- Chaat masala: 1/2 tsp
- Red chili powder:1/2 tsp
- Balck pepper powder:1/2 tsp
- curry leaves chopped
- Salt: to taste
- Oil: 2 tbsp
- Coriander leaves: chopped, for garnish
Instructions:
1. Prepare the Bell Peppers:
- Cut the tops off the bell peppers and remove the seeds and membranes. Keep the tops aside.
2. Prepare the Stuffing:
- Mashed the boiled potatoes
- Add chopped onions and vegetables
- Add ginger-garlic paste and green chilies.
- Add chopped tomatoes and cook until they turn soft.
- Add black pepper powder, red chili powder, Chaat masala, and salt. Mix well.

3.Stuff the Bell Peppers:
- Stuff the bell peppers with the prepared filling. Press down gently to pack the filling.
4. Cook the Stuffed Bell Peppers;
- Heat a little oil in a pan.
- Place the stuffed bell peppers in the pan. Cover with a lid.
- Cook on low heat, turning occasionally, until the bell peppers are tender and slightly charred. This may take about 15-20 minutes.
- Alternatively, you can bake the stuffed bell peppers in a preheated oven at 180°C (350°F) for about 20-25 minutes or until the bell peppers are tender.
5. Serve:
- Garnish with chopped coriander leaves.
- Serve hot with chapati, paratha, or rice.
