It is important that when you pontify about ethnic/traditional food of a region you must have the knowledge about it. Someone who can say the Bhat ki daal is like urad ki daal, that means they know nothing about either. Madua ki rooti is never eaten with bhat ki daal. Badi is not made of cucumber alone, urad daal paste is mixed with it and then sun dried. The mix of lemon, mooli and curd is not a raita but an appetiser. I have no problem in an outsider describing the food of Kumaon but it is important to share the correct details. It is ironical because incorrect information is being endorsed by those who claim to be exports on culinary traditions.

I was thinking the same , person describing it doesn’t know anything they can even say bhat ki daal is like white soyabean which would be more accurate

Just came back from Kumaon. Stayed in a town called Bhowali since hotels were much cheaper than in Nainital. I tasted some of these unique recipes and absolutely fell in love. I ordered bhat dal and bhang from the owner of the hotel. Also they drink a very unique juice of the Rhododendron flower. It's called Buransh. Everything about the place adds flavor to the food there. The unique grains, spices, the water, air, soil, all contribute to the flavors.

I am sorry but why go to a Bundelkhand lady to know food of Uttarakhand who feels Uttarakhand and Himalaya people lived remote thus what was available they made cuisine out of it. Who feels Bhaat ki dal is like urad ki dal. There are enough people in Pahad who know pahadi traditions. Pahad is epicentre of knowledge from ancient times and it wraps 1000’s of years of culture and history. Next time kindly do homework and show real thing’s about a place. Not for the sake of making video and getting views. Thanks

Absolutely zero knowldg about the tradition... I never had bhatt ki dal with madua that too in the same season. Disappointed!!
