Karele Ki Sabji
Ingredients:
For Marination -
Karela, medium (करेला) - 7 nos
Salt (नमक) - 1 tsp
Lemon, medium (नींबू) - 1 no
For Cooking -
Mustard oil (सरसों तेल) - 4 tbsp
Mustard seeds (सरसों दाना) - 1 tsp
Cumin (जीरा) - 1 tsp
Fennel seeds (सौंफ़) - 2 tsp
Green chilli, slit (हरि मिर्च) - 3 nos
Turmeric (हल्दी) - ¾ tsp
Chilli Powder (मिर्ची पाउडर) - 1 tsp
Coriander powder (धनिया पाउडर) - 1 tbsp
Salt (नमक) - to taste
Black Salt (काला नमक) - ½ tsp
Chaat masala/Amchur (चाट मसाला या अमचूर) - 2 tsp
Onion, medium (प्याज़) - 3-4 nos
Coriander, chopped (ताज़ा धनिया) - handful
Ghee (घी) - 2 tsp

My maasi used to make stuffed karela Cutting in big pieces Stuffing : Ground nut powder, coriander powder, jaggery, tamarind sauce, fried onion barista, red chilly powder, kanda-lehsoon masala Sotte stuffing till oil ooze out. Fill stuffing in pieces of Karela Sotte again with onion tomato & masala 😊❤

Oh yes we make it the same way and the water retained is stored in a bottle to have it in the morning 🌄 in empty stomach. No vinegar only lime juice. Ofcourse adding ice and water to make it edible .

Hello Kunal , I really love your recipes and specially this one . My entire family loves Karela and now I have a new recipe! Thanks As a Bengali we also make stuffed karela with mustard, khus paste and deep fried also karela, potato with shrimps ! I love making food that is simple , not too spicy and the main ingredient should be the star of the dish . Your recipes are always great. My grandma and my mom are my inspiration.
