50g couverture sweet chocolate
100g unsalted butter
50g powder sugar
1 egg yolk
20g ground almonds
10g cocoa powder
180g cake flour
■Walnut & vanilla cookie
20g walnut
35g powder sugar
1g salt
1/3 vanilla beans
90g cake flour
60g unsalted butter
1 egg yolk
■Squeezed cookie
80g unsalted butter
30g powder sugar
pinch of salt
15g egg white
100g cake flour
10g ground almonds
1/2 tsp vanilla extract

Me recuerda mi infancia, la parte más bonita cuando mi tío, un maestro que me enseñó a leer y dibujar un día me trato como la niña más apreciada, me llevó a un negocio cerca de casa y me dio a elegir cajitas con galletitas especiales, fue cuando mis ojitos brillaron y elegí una cajita con moñito muy bonito y cuando la abrí había galletitas que se veían tan bonitos y las he saboreado con especial cuidado y pensé por momentos que había nubes dulces, ese día fui una niña feliz.
