Kurkuri Bhindi is a spicy fried snack or main course dish made using Okra, gram flour and spices. It is very irresistible and can be prepared in minutes.
Kurkuri Bhindi
Ingredient Quantity
Lady’s Finger (bhindi) 200 gm.
Red chilli powder ½ tsp + for sprinkle
Cumin powder ½ tsp
Dried mango powder (amchur) ½ tsp
Gram flour (Besan) 4 tbsp
Refind Flour 1Tbsp
Rice flour 1 tbsp
Chaat masala for sprinkle
Salt to taste
Lemon juice ½ no.
Oil for deep-frying
Method:
1. Remove the head and tell from the bhindi and cut horizontally into 4 pieces. Keep it in the bowl.
2. Add lemon juice and mix well.
3. Add red chilli powder, cumin powder and amchur powder, mix well.
4. Add gram flour, flour and rice flour and mix well.
5. Add salt and mix well.
6. Heat oil in pan and deep fry the bhindi till half done.
7. Drain out onto the kitchen towel.
8. Reheat the oil and fry the bhindi again till crisp and golden brown in color.
9. Remove in kitchen towel, sprinkle some red chilli powder and chat masala on top and mix well.
10. Remove in serving plate and serve hot with spicy chutney.

Thanks Noor, yes the simple trick is to addlemon juice because all other recipes show to remove seeds then what is the point of doing bhindi

Ok! Last 2 recipe of Bindi i saw you cooked bindi, i wanted to tell you this.... Why is that Indians use red chilli for everything?? Don't they know what happens when you eat a certain food??? The lace or sricky natured vegetables give cold to human body... like colicasia, urad dhal (vada), Bindi... etc have natural fluffy nature or stickiness... we use pepper and never chili powder... pepper acts as anti cold agent and balances the food... same with yeast if used with some masala but better with pepper and garlic... Pepper has qualities like removing toxins of even insect bites and is a good medicine in food... removes excess bacteria causing infection that is in common cold... Chefs have the duty to first check side effects of each food when getting creative, but not skip ingredients that helps in good health....

Let me correct you here red chilli is not used everywhere I cooking, definitely pepper and green chillies are used too in specific recipes, for the lace/sliminess we ingredients like bhindi/yam/tubers aamchur powder and lemon is used too which also benefits

Harpal Singh: thank you for the correction... I would still debate on this... you still need to know your food from herbs and spices... garlic and pepper can be a part of herbs which many people seek when sick as home remedy... but if used wisely, one does not need to fall sick... lemon and amchur are not spice but part of food category... Eg: adding lemon in Bindi, both are cold, may be lime will aid in digestion but will not eliminate the bacteria causing cold... but if u add lemon and pepper in 1 tbs you can eliminate sinus just with these 2... The toxicity in garlic can open up fat in arteries and veins to reduce BP if used right, for better heart health... the same toxicity can destroy cold causing bacteria and fungus in body... Did you know common cold can be due to many reasons: different body temperature, gastric intestine, bile etc... garlic can heal all of these... Pepper too in itself is a venom/poison... so some people soak the pepper over night dry/fry and then grind it in powder... I don't... because biting 3 pepper each day can keep you immune to any insect bites... that is the toxicity we speak of... it is used in many herbs.. I've not gone too far into the research of pepper in wounds directly... but food yes.. you have this haldhi milk mix for cold; pepper and garlic is one of the important ingredients... Trying to keep it short for you to do your research... Coming to the topic of chilli, it's upto you... but comparatively red chilli gives ulcers, because of toxicity and green gives immunity to body thereby enhancing the healing system... adding too much of spice during pregnancy can be fatal, because red chilli is heat... some have early deliveries due to imbalance of heat in body and food... normally a pregnant woman is a bit warm than normal people, adding chillies can be fatal... amchur is heat, that is why even in pregnancy it is given after the 5th month till the foetus is steady and strong... Cooking can be fun for those who want to make it their money making business... my dad calls cooking an art, seeing how patiently mom used to spend time calculating everything into her food... same cooking can be medicine or service (from the heart) when the cook cares for the health of his or her customers... because the life of customers directly dependent on the cook and his heart to serve...

Harpal Singh: as i was pondering over the thought about time consuming cooking... i recall a few friends whom.i had to put up with tossing the attender up for late service... it's a negative side many good restaurants put up with to please customers... I know this quote may sound blunt, but from your place I think it's not a problem for you... "We don't live to eat; but eat to live... and we want our customers to live long with healthy food.. so we appreciate you patience and your time given to us to cook you a healthy meal. Thank you in advance... " That in the entrance should let the customers know it takes time... if they don't have one they can take a u-turn and find a fast food place... 😀😂 Even better with each item on the menu, put the least amount taken to cook along with price... so customers can pick the one with the time they can afford to give the cook... they are willing to wait 45 minutes in pizza hut when they say it takes such and such time, is it not?? Because they.want fresh service on their table... i think people can take that attitude here too...
