BIBINGKANG MALAGKIT RECIPE | Filipino Rice Cake with Caramelized Coconut Topping

Bibingkang malagkit is one of the most favorite rice cake in the Philippines. It is made from a simple combination of glutinous rice, brown sugar, and coconut milk that is baked and topped with coconut caramel sauce. This recipe is perfectly sweet, creamy, and chewy.

Ingredients:
2 cups glutinous rice
2 cups coconut milk
1 1/2 cups water
1 cup brown sugar
Toppings:
1 1/2 cup coconut cream
1 cup brown sugar

I tried making this biko by reducing the brown sugar added to the rice.despite diabetic i love biko and the sugar for topping...in moderation.😘

I tried this dessert one day I went to a filipino store, and fell in love immediately. The label said “bibingka”, and I wanted to try making it at home, but every time I looked for recipes, I got ones with duck eggs and other stuff that the one I ate didn’t have. A friend/coworker used to feed me this occasionally. Took me forever to figure out what it was called. Now I can make my own... assuming I can find the ingredients. I think the version I had had coconut flakes in the topping.

It would have been coconut cream cooked until it separates. The curdles are what she put on top... We don't put coconut flakes.
