Lángos is a fried dough, commonly eaten as a street food in Hungary, which you can buy at any market. It's usually topped with garlic, sour cream and cheese but it's delicious with any topping (e.g: chopped red onion, bacon, meat sauce etc.). It's really easy to make, requiring only a few ingredients and a bit of time. It's also great as a light lunch (don't forget to have beer or spritzer with it :)
Ingredients (for 6 pieces)
4 cups (500 gr) flour
1,5 cups (350 ml) lukewarm water
2 tsp sugar
0,7 oz (20 gr) fresh yeast
1 tbsp salt
0,4 cup (100 ml) oil
plus 4-5 cups oil for frying
For the garlic oil:
2-3 cloves of garlic
1,7 oz (50 ml) oil
1,7 oz (50 ml) water
1 tsp of salt
For serving:
Sour cream
Grated cheese (Cheddar, Gouda or similar cheese)
1. First make the garlic oil: Crush 2-3 garlic cloves into a jar. Pour over 50 ml of water and 50 ml of oil. Add 1 tsp of salt, mix well and put it into the fridge for 1 hour.
2. Make the dough: Pour 1,5 cup lukewarm water into a bowl.
3. Add 2 tsp of sugar and mix well.
4. Crumble the fresh yeast into it, stir and let it dissolve.
5. Sift the flour into a large bowl. Add 1 tbsp of salt, mix, then pour over the yeast mixture.
6. Mix it together with your hand, and knead the dough well at least for 10 minutes, until it's smooth and elastic, and doesn't stick to the bowl anymore.
7. Cover and let it rise for 20 minutes.
8. After 20 minutes it's well risen.
9. Pour 100 ml oil around the dough. Pull the dough up, so the oil gets under it. It helps push the air out of the dough a little.
10. Cover it again for 5-8 minutes
11. Get a handful of dough and form it into a round shape. Do the same with the rest of your dough (it should make 6 pieces)
12. Let them rest for 10 minutes.
13. Heat 4-5 cups oil to a (really) high temperature. (check with a pinch of dough if it's high enough)
14. Get one dough-ball and stretch it with your hands, turning a pulling it into a flatter round shape. (the outside of the round should be thicker than the center)
15. Carefully place it into the hot oil (it's immediately getting fluffy)
16. Fry this side for 1-1,5 minutes, pushing the center back into the oil
17. Turn it over, when it's golden brown. Fry the other side for 1 minute then take it out onto a plate covered with paper towel.
18. Repeat this process with the rest of your dough.
19. When you finished the frying, it's time to serve!
20. Brush the Lángos with the garlic oil, spread 2-3 tbsp sour cream on it then sprinkle a handful of grated cheese on top.
21. ENJOY! (and don't forget your Spitzer!!)

I lived in Budapest for 3 months and this was my favorite hungarian specialty. I tried your recipe and I gotta say, it tasted even better than the ones I ate there. Amazing, kudos!!!

I just found your channel and I love it. I grew up in Hungary in the '60s and early '70s. Langos was one of my favorite foods. Back then we didn't put any toppings on it, just ate it plain with a bit of salt. Thank you for making these videos. My wife is also Hungarian and she makes a lot of these delicious delights as well, but nothing really beats my Grandma's cooking. The smells, the tastes and the sights. She actually had dried paprika hanging on the outside walls of her house.

Thanks Alexa! I hope your parents and grandparents will like the Lángos :) Here is my recipe for the cucumber salad: Finely slice the cucumber (use a mandolin), sprinkle some salt over, add 1 tsp finely chopped dill and and one clove of garlic - minced. Let it stand for 10-15 mins. Mix 80-100 ml water with 1-2 tbsp vinegar, some sugar, black pepper and (maybe) a pinch of salt /check the sliced cucumber if it's salty enough/. Pour this mix over the cucumber and refrigerate. It can be served with sour cream on top, but we sometimes eat without it - just sprinkle some pinch of paprika on it. Usually I make it without dill and it's delicious that way too :)

I first tried langos a year ago at a market and couldn’t believe how good they were. I found your video the other day and saved it because it looked like the method used at the nether (although they deep fried them). It's the Wife if that suggested it. As a Hungarian my mum used to make this and put jam on it I never had it savoury until 1 till I went back to Hungary. And I found it it a bit salty. Used to have it as a child with goulash. Thank you for trying it though.

I was born in Texas but my parents and grand parents are hungarians. My great grand parents came over from hungary after the turn of the century. I grew up eating a lot of traditional hungarian food. Oddly my mother says she has never heard of langos and neither have I. I'm 62 yo now so maybe its a newer thing hungarian cuisine wise. Sadly, I have never been to hungary and would love to see budapescht. On another note, I'll be eating leftover cabbage rolls my sister made tonight. They are very good but she never puts enough paprika!!!!

Thank you so much for your kind comment! It is interesting that you've never heard of Lángos - it is quite an "old" Hungarian food. Earlier people baked in a clay-oven (mainly in villages), but in the cities they started to fry it oil. I hope, you can visit Hungary/Budapest one day - both are beautiful! (I envy you for the cabbage rolls - I would gladly eat it right no /even with less paprika :D)

My family stayed in the northeast. I've never been to Hungary either although I did help my aunt find the village my grandmother was born in and she met relatives when she went. My grandmother and grand parents came to USA in 1928, between WWI and WWII. Langos was not a food in our family. Our most made dishes were stuffed cabbage, cucumber salad, plum dumplings with fried breadcrumbs, fried cabbage and noodles, chicken paprikas, pork and sauerkraut dishes, kielbaz. I'm sure more but can't think of now. Oh and desserts! Can't forget those! The walnut cake my grandmother always made---whenever I make it some one always calls it "monkey bread" But we always called it walnut cake, in Hungarian, I believe its aranygaluska. We never made it with vanilla sauce though, just plain or with soft butter smeared on a piece. They came from very small settlement within 30 min of Ukrainian border in one direction and Romanian in another (The new borders drawn at Trianon) Very poor so between that and then the Depression and WWII, they probably had to be very no frills and that's how we all grew up with it. Anyway, we also always had the nut and poppy rolls on holidays, as well as plum lekvar and cheese rolls. The cookies with apricot, plum, walnut.....Ok, I need something Hungarian NOW. I've got all the ingredients in my house as staples--time to get cooking!!

I'm sorry, I don't know what went wrong. Yes, you should knead it well, and let it rise (twice) well. It's important. And stretch the dough-ball (before frying) quite thin. But never mind, when I made my lángos first time, it was inedible... :) Congrats for trying!

@@yutheke 1 Hefewürfel = 2 Päckchen Trockenhefe 1 Päckchen Trockenhefe = ein halber Hefewürfel. Ich wurde die Rezepte ohne Ersätzungen versuchen zu folgen. Also, viel Gluck und Spass dammit ! 🙂

There are many kiosks/buffets selling Langos here in Hungary - most of them are good, but sadly there are very bad too. I'm glad you found one of the best one :D

Hi! Couldn't find fresh yeast. Is it possible to use dry yeast and if so, does it take the same time to let it grow? Thanks!!

In Hungary 1 packet of dried yeast is equal to 25 grams of fresh yeast, so you should use almost one packet. If I'm using dried yeast I usually use it the same way as the fresh one: let it rise in the lukewarm milk (mixed with some sugar) then use this mixture the same way. I suppose the rising time is the same. I hope it helps!

Yes, you can! Use about 8 gram of instant or active dry yeast and dissolve and rise it the same way as the fresh. I hope it helps :)

I love langos and i tried your recipe.... it’s easy to make but mine tasted just like fried bread, while the once that i eat in Hungary have a sweet taste... is that a different recipe? Or did i do something wrong?

Langos is a fried bread, so it should taste as a fried bread. But there are several recipes (the dough can be made with yogurt, sour cream or milk instead of water, with some added sugar, or in other recipes boiled mashed potato is added) , so maybe you tried a different one which had sweet taste. I don't think you made something wrong - my recipe is the "plane" langos.

Oh, I meant to ask, what kind of oil do you use for frying? Also, your dog is so sweet. We had a dog like that once and my Mother called her Zsemlemorzsa. Finally, your soda siphon is amazing! I wonder if they are still available?

Many thanks for your comment! You can use any vegetable oil which suitable for frying, (mine was sunflower seeds oil): corn or canola oil works well too. Yes, soda siphon are available again in Hungary - it's seems the "retro" things are back in fashion. Mine is an old one but I love it :) What a good name is "Zsemlemorzsa", I like it very much! Lassi is a sweet, food-lover, we got her from a shelter when we lived in New York.

Ideal would be a once pressed sunflower oil. It will have a wonderful nutty taste. It could get a bit expensive in the west but than again you only live once :) Whatever you do don't use palm oil. That stuff is rancid. You can order soda bottles and CO2 patrons from amazon, or if you wish you can buy and expensive soda machine. This may look simple but you have to be really fast frying the dough, adding the ingredients and eat it while it is still warm. I made 6 langosi today and only the last 2 were perfect.

Yes, it needs some practice to get it right. It's not the worst ratio to have 2 perfects from 6 :) For me the hardest part to get the oil to the perfect temperature where the Langos can fry quickly but not burn.

I've heated up the oil on the biggest burner on medium heat, so the residue heat does not overheat the oil when the scewer shows it hot enough. I've used a wooden scewer to check when it is hot. You see a lot of rapid bubbles at the wood. Then I tested a little bit of dough like recommended here. It sprang immediately to the surface, so I knew I can start. I find that the oil does not get too cold or burn, when it's left on medium heat and you immediately add a new langos when you take the finished one out. For good timing, when one side is fried, turn the langos and start forming the next one, place it over your left palm take the fried one out using toungs and your right hand. Let go of the toungs and use both hands to lower the langos in the oil. They all were perfect.

Growing up mama would fry these up to eat with bableves. We'd take raw garlic cloves and rub them on the outside of the langos. Good stuff!

You can use instant yeast, it works well. Here, in Hungary one packet of dry yeast is 7 grams, which is equal to 25 grams of fresh yeast. So you will need a little bit less than a packet. Usually if I use instant yeast, I use it as fresh: lukewarm milk with a little sugar, pour the yeast in and let it rise. I hope it helps!

In Hungary usually Trappista cheese is put on top. But you can use any kind of semi-hard cheese like cheddar, gouda etc.

You can keep it in the fridge (in a well oiled bowl or ziplock) for 5-6 days. The dough can also be frozen :D

Is it a tablespoon or a teaspoon of salt for the dough? A tablespoon seems too much and for what I can see in the video it looks like a small spoon (teaspoon).

I've used a (flat) tablespoon of salt (but it was sea-salt, which is less salty than other salts). When the dough is fried it doesn't taste too salty (we usually sprinkle extra salt on top when eating). Of course, you can use less according to your preference.

It's usually available at supermarkets, somewhere in the fridge section where the butters, sour creams are. If you can't find fresh yeast, you can use dry. I hope it helps!
