Apple pie is the best homemade pie: soft, fragrant and sweet at the right point, ideal for breakfast, a snack or dessert. Here is my traditional recipe with Fuji apples.

🍳 INGREDIENTS 🍳
flour 00 250 g
baking powder for desserts 16 g
125 g butter (at room temperature)
fresh whole milk 100 g
4 medium eggs (at room temperature)
granulated sugar 125 g
2 medium fuji apples (about 400 g)
vanilla 1 pod
lemon the grated rind of 1
salt 1 pinch
🍳 PREPARATION 🍳
00:00 - Start by putting the butter with the sugar in a cutter and start working it. Still beating, add the eggs,
01:47 - Add the vanilla, grated lemon zest, pinch of salt and milk. At this point, by hand, combine the sifted flour with the baking powder and mix well to mix all the ingredients until you get a smooth and homogeneous mixture.
04:55 - Take the springform pan, butter it and line the bottom and sides with parchment paper (you can also use the spray release agent if you wish), then transfer the dough that will form the base of the cake inside.
07:12 - Take the apples, core them, peel them and cut them into quarters; if you don't have a corer, peel the apples, cut them into quarters and then remove the central part of the core with a small knife. Now from each apple quarter make 5-6 slices.
08:27 - Start arranging the apple slices vertically by placing the thinnest part down, in the dough but without sinking the slice. You will have to arrange them in a radial pattern, so to obtain a workmanlike work and space them equally, arrange the first 4 slices in a cross, thus dividing the perimeter of the cake into 4 equal parts. Arrange another 4 slices exactly in the middle of the spaces obtained and so on, until the entire perimeter is filled with apple slices. For the center left empty and smaller, cut the slices in half and also arrange them in a radial pattern.
09:08 - Bake the apple pie in a preheated static oven at 175° for about 40 minutes, then take it out of the oven and let it cool, remove the edges of the pan and let it cool completely.
09:31 - When the cake is cold, remove the parchment paper from the bottom and place it on a serving plate, then sprinkle it with a little icing sugar.
