Ingredients:
1 cup gram flour (besan)
1/4 cup semolina (sooji)
1/2 cup powdered sugar
1/4 cup ghee (clarified butter)
1/4 teaspoon cardamom powder
2 tablespoons chopped nuts (almonds, cashews, pistachios)
Oil for deep frying
Instructions:
Prepare the Batter:
In a mixing bowl, combine gram flour (besan) and semolina (sooji).
Gradually add water while stirring continuously to make a smooth, lump-free batter. The consistency should be thick yet pourable. Set aside.
Fry the Laddu Peethi:
Heat oil in a deep frying pan over medium heat.
Once the oil is hot, reduce the flame to low.
Take a perforated spoon or a jhara (slotted spoon) and hold it just above the hot oil. Pour a ladleful of batter over the spoon, letting it fall into the oil in a thin stream.
Fry until the laddu peethi turns golden brown and crispy. Remove from oil and drain excess oil on paper towels. Repeat with the remaining batter.
Prepare the Sugar Syrup:
In a separate pan, heat powdered sugar with a little water over low heat to make a thick syrup. Add cardamom powder and mix well.
Assemble the Laddu Peethi:
Once the laddu peethi has cooled slightly, dip each piece into the warm sugar syrup, ensuring it's coated evenly.
Place the coated laddu peethi on a serving plate.
Garnish with chopped nuts while the syrup is still sticky so that they adhere well.
Serve:
Allow the laddu peethi to cool completely before serving.
