Lanzhou beef noodle soup is a type of Chinese ramen noodle soup with beef slices served on the top. Lan Zhou is the city where it originally comes from but now it is the most popular noodle in all over China. Where I used to live in Guang zhou. Almost every corn of the street has this type of noodle restaurant and it always run by Muslim so sometimes I called it Muslim noodles too. It tastes so good. The noodle is freshly made in front of you. The broth is so fragrant. I can eat this every single day. Now that I finally developed this recipe and it tastes just as good as the restaurant.

*Ingredients for the beef broth and beef slices:*
- 2 medium size of red onion
- 4 slices of ginger
- 1 pieces of cinnamon stick
- 4 pieces of star anise
- 1.5 tsp of Sichuan peppercorn
- 1.5 tsp of black peppercorn
- 2 tsp of cumin seed
- 4 pounds of beef bones (it is best to do a mix of all different cuts of bones)
- 1 pounds of beef meat (beef chuck, rib eye, beef brisket, shank)
- Water
*Ingredients for serving the noodles (1 portion):*
- Few slices of cooked beef
- Diced cilantro and scallion
- 2 cups of beef broth
- salt to taste
- black pepper to taste
- 1 cup of freshly made noodles (Recipe link: • How to make Chinese No... )
- 2 tsp of chili oil ( Recipe link: • Hot Chili Oil Recipe )
INSTRUCTION
- Wash 4 pounds of beef bones to remove any bone dust. It is best to do a mix of all different cuts of bones.
- Soak the bones and the beef meat with cold water. Let this sit in the fridge overnight.
- Next day, take the bones out and wash with clean water. Continue soaking the meat in the fridge.
- Put the washed bones in a big pot and fill it up with water. Bring it to a boil. Once it comes to a boil, you will see a lot of impurity floating on the top. Those are the things that will affect the flavor and the texture of the broth. That is why we are going to get rid of this whole batch of water. You don’t need to worry about wasting all the flavor. The good stuff won’t come out in the first 10 minutes of boiling. Wash the bones again. Put the bone back and fill it up with water.
- Cover it and bring this to a boil. Then simmer this for at least 3 hours. If you want to do it overnight, you can. But you want to put the lid slightly open. You don’t want it to be fully covered.
-This is 3 hours later and I am going to add the beef. The reason I didn’t add the beef from the beginning is that after 3 hours simmering, the broth is pretty rich now and if you cook the beef in the broth, it will taste better.
- Keep simmering this for another 4 hours. Then take out the beef meat. Cool it down in the fridge so it will be easier to slice it. Now you can check out the broth. Normally, there will be some oil floating on the top. You can take that out. The broth is very rich now but for making authentic Lan Zhou la mian, the broth needs some aroma. You want to add the spices 1 hour before serving. In this way, you can get the maximum fragrance out of it. I will add 2 medium-size onions, cut them in half. 4 slices of ginger, 1 pieces of cinnamon, 4 pieces of star anise, 1.5 tsp of Sichuan peppercorn, 1.5 tsp of black peppercorn, 2 tsp of toasted cumin seed. Give this a stir. We will keep simmering this for another 1 hour.
- 1 hour later, the broth is ready. I just keep it on the stove like that so it doesn’t get cold.
- Take the beef meat out and slice it thinly. Also, prepare some chili oil, diced green onion, cilantro and some noodles.
- Cook the noodles in boiling water for 2-4 minutes. Take out the noodles and put it in a serving bowl. Add some salt, black pepper to taste, diced scallion and cilantro. put some slices of beef on top of the noodles and pour the broth into the bowl. If you like spicy food, you can add some chili oil.
- That’s it. you have your authentic Lan Zhou beef noodle soup. Enjoy!

I love cooking videos that properly show all the steps and don't rush through things. This so helpful when cooking an unfamiliar dish. Although I don't use beef in my cooking often, I really think I will have to try this recipe.

Or you can boiled the bones for about 5 minute’s drained and wash each bone to clear off the blood and residues. Wash the pot of blood and residues then put everything back in the pot and slow simmer bones for 3-4 hours for clear broth

That is by far the most thorough preparation of stock I've ever seen! There's enough information here to start a small restaurant, or to have a nice meal with the few people I know who aren't vegetarians. I can definitely imagine this with beef shank. This looks like a good job for someone who's retired... you don't need so much skill as persistence I think you're saying. Sometimes in an Asian market I see those spices, all together in a plastic bag, or even in something like a big tea bag.

Leonard Pearlman it's called a spice bag which is what she's referring to in the video. The mixed spices is collectively known as 5 spice wich contains fennel, cloves,cinnamon, star anise and szechuan peppercorns.

WOW!! I never appreciated how much work my local noodle shop went through! Each day, I ate breakfast at my corner store noodle shop. At lunch, my school served noodle soup for us. I preferred the noodle shop food, over the school's, & would often take the half block walk to get a great bowl of noodles, vs a mediocre bowl of soggy, overcooked, noodles. I plan to try your recipe next weekend. I will have a lot of time to do it properly, then, (3 day weekend). I will let you know how it turns out. Truthfully, I hope that it's at least half as good as my noodle shop made for my friends & I. Thank you for the very explicit instructions. Pheesao

For freezing the broth: chilling the broth and then measuring 2 cup portions into zip-lock bags is a great way to save it. Freezer bags are preferred
